I made this last night. I cooked the onions on the stove top because I did not want to wait for the slow cooker. I also added carrots and mushrooms and bagged shredded cabbage.. well.... I wanted to eat the whole pot! Outstanding!

I threw my onions and all the other ingredients into my pressure cooker 15 lb of pressure for 10 minutes and everything came out fabulous and so delicious and caramelized all together. This is a wonderful recipe and I thank you very much Chef AJ. ❣️
@CHEF AJ here Ya go, a cheater cabbage tip: throw in 1/3 amount,set on press cook,but don't lock lid, so there's a bit of cooking to settle the cabbage bits for a couple of minutes, then you'll have room for the rest of the veg...cheers

Whoa...those three onions created such an amazing broth! It was making my mouth water as I was thinking of all the ways I can use this! I cannot wait to make this for Christmas. I have a relative coming over that eats no veggies except potatoes so I'm going to see if this works....if not, more for us!!! Yayyyy!!!
Took cook a head or two of cabbage in a slow cooker you have to circle back, it's not about doing it all at once because you WANT those different textures. After the first batch cooks down a little add the rest of you cabbage, mix it up and then turn down the head and let it slow cook.
Yeah, mushrooms here, too. So how about doing the same exact thing in a slow cooker with sliced mushrooms as we're doing for sliced onions? I do this on the stove using the water the mushrooms generate and adding broth when necessary. Chef AJ, ever try to saute/caramelize mushrooms in a slow cooker?
I just found this post and I cannot wait to try it tonight. Unfortunately, I caramelized the onions in the crock pot for 24 hours and I just checked them and they are mostly burnt at 23 hours. Now I know for the future to check them at 21 hours. I will make due with some low sodium broth and some of the onions I can salvage. 🙂

It depends what else you’re eating but yes you can still lose weight if you don’t refrigerate them before you eat them. You must also eat a lot of vegetables and I also recommend a very low fat approach. Have you read my book by any chance?

I make this quite often but not in the insta pot. When I do it in a wok, it stays beautiful al dente. We add capsicum and carrots. Onions are not required. It looks all soggy out of this pot.
I gave away my slow cooker and rice cooker after I bought my 8 qt. Instant Pot. Can I still caramelize the onions in my Instant Pot? (I usually just brown my onion and celery on the Saute button which only takes a few minutes.) I've never used the Slow Cooker function. I love your videos!!!

Instead of spending several dollars on a diverter, I followed another TH-camr's advice and bought a 50 cent piece of plastic elbow plumbing pipe. It diverts the steam quite well.

Can the IP be used in slow cooker mode to caramelize the onions? I like to save on dishwashing by using one pot for a meal, i.e. caramelize overnight in the IP t and then cook the rest under pressure, remove, and then cook the cabbage/potatoes under pressure.

Sorry, those are basically just boiled onions, their gray color not so appealing. This recipe, delicious sounding all on its own, stirs the imagination as a jumping off point for so many variations. My German grandmother Oma made something similar that our family has been enjoying for over 100 years. No pressure cookers or crock pots though. She started off with some meat. Bite sized pieces browned, removed and set aside. (Oma used pork chops, Mom used pork steaks, I have evolved to chicken.) Sliced onions, browned in the fat and fond in the pan. Add cut up potatoes and cabbage coarsely sliced. S & P, dash Worcestershire, pieces of meat on top add some water and slowly cook covered, over low heat 'til potatoes and cabbage are soft. Add water if needed during cooking. Put meat on a platter and mash all the veg and drippings together to the consistency of lumpy mashed potatoes. Dinner is ready. Sounds awful, tastes great. Oma used a Dutch oven on the stovetop. Mom liked a large electric frying pan. It all works. Our family has always called it "Gook".
Made it!! Did the onions almost a week ago in rice/slow cooker. Next time I'll shove in even more onions because they sure do shrink. Used 6-quart IP for the cabbage and potato part.. 1. 3.47-pound purple cabbage which stayed purple, so I'll use purple again next time. 2. Upped the minced garlic from 2t to 5t. 3. Upped the 2t of mustard seeds to 3t of ground mustard seeds. 4. Had room left in IP, so I added 3 small potatoes, upping the potatoes from 2 lb to 2.5 or 3 lb (forgot to weigh those extra potatoes). 5. Used the 4T of California balsamic vinegar (really good). Started eating it and liked it but it needed something. Tomorrow when I make highly seasoned oat groats, I would have added them and that would do the trick. But earlier today I made highly seasoned cannnellini beans in IP and when done, I added a whole bunch of the ground mustard seed just for the hell of it. I like it! So I added the beans to my serving and it's FAB. 6. So I added the whole batch of the now more seasoned cannellini beans (from 1 pound dried beans) reserving 1 3/4C for Nutmeg Notebook Creamy Balsamic Dressing that I'll make tomorrow, mixed it in IP with big tongs and then ate another serving and I love it. I'm totally stuffed and have probably 10 meals, many of which will go in freezer to insure against waste and I'll cook it frozen in IP and have these great meals waiting for me. I'll probably finish it in a week. THANK YOU, CHEF AJ!!!
Hi AJ, I am confused, every time you use potato's are they cooked the day before and kept in the fridge ?. or can I just cook and eat the potatoes ?. ………….. which one is it. please advise.
my wife has been cooking, boiling and keeping in the fridge for next day for me to eat.. I have had the a baked potato but it seemed so filling that I thought that it should have kept till next day.. if your saying either way, then I can roast/boil and eat straight away, will I still lose weight ?. I have been only eating next day cooked potato. have I got this total wrong, resistance starch is what I was thing of...……….. this has knocked me for six.... totally confused.

CHEF AJ When I’m eating it raw I always prefer the purple cabbage because it seems a little bit sweeter and it’s definitely prettier. But when it’s cooked in this recipe it gets very dark but I suppose the color doesn’t really matter
@@CHEFAJ Thanks so much for your quick reply! Okay, I'll try the purple and report back. The onions are cooking in my rice cooker that I'm so glad I never gave away. The house smells great, they're getting dark, and the liquid it formed will be amazing to throw into the IP with the cabbage & potatoes. 4-5 pounds of sliced onions that filled it to the very top cooked down to half the bowl very quickly. Next time I'll aggressively pack that bowl with more onions so I have more left over to freeze. How many cups of the caramelized onions would you say? 4 cups? 6 cups? I'll probably throw my whole batch in but for the future if I do succeed in shoving a lot more onions into the slow cooker. I guess you can't overdo caramelized onions, so however many you can make in a batch, just use it is probably the answer.
Is there a way to carmalize the onions without a slow cooker? If so, please share. I definitely want to try this dish. I want to know the water to onion ratio and cook on the stove top. I do have the six quart instant pot. Clearly I need to get the bigger one.

This dish is right up my alley. Chef AJ, you're fabulous!! (I have 6-quart for 2+ years. The only time I question it is when I make broth (once a month maybe). The IP is a fixture on my counter in my very small kitchen and I'm afraid the 8 qt will just be too big, like an eyesore.)
Yep, I understand! I'd have the 8 if I had more room. Your advice is extremely great. Just ordered a bunch of the balsamics, 2 of the white because I know I'm going to make this fab recipe multiple times, and the curry and the garlic. Can't wait to see the difference between these and what Trader Joe used to call balsamic vinegar but now calls white modena vinegar. Big difference in price but I know they're really incomparable.

I cut nearly all your recipes in half as I live alone and have a gastric sleeve. Less food waste that way. Even so, I often freeze the excess so I don’t waste anything.
Just finished my second bowl , we didn't have mustard seed. So I squirted some Dijon over the potatoes. We also got the idea some smoked sausage might go well. I have to say this is a flavor I have never tasted , but will again. YUM ! Thanks ! :)

I caramelized my onions in a Dutch oven before adding the other ingredients plus carrots. Used a bit of veggie broth. Cooked everything on stove over low heat for a couple of hours. It was amazing!

Sue Bower unless you do it for 24 hours it won’t be as good. I don’t think the pressure cooker works as good for this

I tried that. It just doesn't stay on. Might have to buy a diverter, after all.
Don't use an elbow, use a "Tee". An elbow is not balanced, whereas a "T" is.

Hi AJ, I am confused, every time you use potato's are they cooked the day before and kept in the fridge ?. or can I just cook and eat the potatoes ?. ………….. which one is it. please advise.

my wife has been cooking, boiling and keeping in the fridge for next day for me to eat.. I have had the a baked potato but it seemed so filling that I thought that it should have kept till next day.. if your saying either way, then I can roast/boil and eat straight away, will I still lose weight ?. I have been only eating next day cooked potato. have I got this total wrong, resistance starch is what I was thing of...……….. this has knocked me for six.... totally confused.

CHEF AJ When I’m eating it raw I always prefer the purple cabbage because it seems a little bit sweeter and it’s definitely prettier. But when it’s cooked in this recipe it gets very dark but I suppose the color doesn’t really matter
@@CHEFAJ Thanks so much for your quick reply! Okay, I'll try the purple and report back. The onions are cooking in my rice cooker that I'm so glad I never gave away. The house smells great, they're getting dark, and the liquid it formed will be amazing to throw into the IP with the cabbage & potatoes. 4-5 pounds of sliced onions that filled it to the very top cooked down to half the bowl very quickly. Next time I'll aggressively pack that bowl with more onions so I have more left over to freeze. How many cups of the caramelized onions would you say? 4 cups? 6 cups? I'll probably throw my whole batch in but for the future if I do succeed in shoving a lot more onions into the slow cooker. I guess you can't overdo caramelized onions, so however many you can make in a batch, just use it is probably the answer.

Is there a way to carmalize the onions without a slow cooker? If so, please share. I definitely want to try this dish. I want to know the water to onion ratio and cook on the stove top. I do have the six quart instant pot. Clearly I need to get the bigger one.
The other ways won't be as flavorful with this depth.
@@CHEFAJ I will try slow cooking in IP for 20 hours and see what we get and report back! Can't wait to buy cabbage and a few pounds of mushrooms, which I'll cook on stove. This dish is right up my alley. Chef AJ, you're fabulous!! (I have 6-quart for 2+ years. The only time I question it is when I make broth (once a month maybe). The IP is a fixture on my counter in my very small kitchen and I'm afraid the 8 qt will just be too big, like an eyesore.)

Yep, I understand! I'd have the 8 if I had more room. Your advice is extremely great. Just ordered a bunch of the balsamics, 2 of the white because I know I'm going to make this fab recipe multiple times, and the curry and the garlic. Can't wait to see the difference between these and what Trader Joe used to call balsamic vinegar but now calls white modena vinegar. Big difference in price but I know they're really incomparable.

I cut nearly all your recipes in half as I live alone and have a gastric sleeve. Less food waste that way. Even so, I often freeze the excess so I don’t waste anything.

Just finished my second bowl , we didn't have mustard seed. So I squirted some Dijon over the potatoes. We also got the idea some smoked sausage might go well. I have to say this is a flavor I have never tasted , but will again. YUM ! Thanks ! :)
Love your videos and recipes but sometimes its hard to watch as the camera moves a lot and gives me motion sickness. it would be wonderful if there is a way to position the camera without moving it so much. thanks.

Not one that will impart this deep rich flavor unfortunately
I caramelized my onions in a Dutch oven before adding the other ingredients plus carrots. Used a bit of veggie broth. Cooked everything on stove over low heat for a couple of hours. It was amazing!
What else could you use besides vinegar I hate vinegar.
I don't know a sub for vinegar sorry the recipe is based on white balsamic
