Just thought I’d let you know, Gemma, Pistachio is my very favourite flavour of ice cream. Many thanks for this! I was surprised about the olive oil, I’m guessing the olive flavour won’t show up in the final product?
Love the recipe Gemma! For people who don't have a churner , you can get a big bowl fill it with ice and sprinkle some salt on it , and then put on a smaller bowl with your gelato base in and start wisking it until it starts transforming, works like a sharm!
Thanks for sharing this here. Although an ice cream maker produces the best results, you can make pistachio gelato without one by using a freezer-safe container or a loaf pan, and manually stirring every 30 minutes until it reaches the desired consistency.

Hi. Sugar doesn't actually “cook” eggs the same way heat does but rather changes the chemical structure of the protein in the eggs. When eggs (especially yolks) and sugar sit too long without being mixed, the water in the yolks is absorbed by the sugar and you end up with a hard, clumpy mess.

Hi. Hi. Using only the yolks yields a lighter texture for the gelato. I used whole eggs when we shot this video, and the result was great. In a subsequent kitchen test I used only egg yolks, to compare the result. You can use either. Hope this helps.

I’ll have to adjust my recipe to account for expansion in the machine. When I use just the yolks(4) now it fills the bowl of the machine by the time it freezes. What do you suggest?
What's the difference between ice cream and gelato? I saw that the machine had different settings. Love pistachio ice cream. I might give this a try. 😇🩷🙏🙌
Good question! They both have the same ingredients however the ratios aren’t - leaving you with two slightly similar but different results. Basically, both are custards made with eggs, sugar, milk, and cream, however classic ice cream has more cream than milk… and gelato has more milk than cream. Hope this helps.

quick question your recipe and on screen prompt says egg yolks but visually it looks like you used the whole egg am i just misunderstanding?
I believe it said you can use egg yolks only if you want a lighter gelato.

I didn't think geleto used eggs? I thought that was the difference to ice cream.
