I've cooked a few picanha cuts on my KJ Classic 3 and they all came out great. Even seared directly on the coals one time, and the char on the meat was excellent. I see you have the cast iron insert. I don't have it, but I strongly recommend getting the soapstone for your grill. It's performance exceeds expectations, and the upkeep is minimal, especially compared to cast iron.
Mostly for searing steaks and smash burgers. I did cook some tilapia filets directly on the soapstone, and they came out really good. I didn’t want to put the fish directly on the grill grates, and the soapstone worked out nicely.
Finally! Someone said it. That picanha is not properly done, there's a thick layer of fat that did not render at all. It should be grilled fat side down most of the time until all the fat renders and it should be seared on the other side when the temperature inside is right, poor picanha

haven't cooked a whole lot on the soapstone, we do sell loads of them though so need to start using it a bit more for sure.
