I would not blend cilantro with spinach, but would chop it and mix in the rice at the very end, and leave some on top of the dish to garnish before serving.

When you’re cooking a rice dish with more than just liquid and rice, how do you determine the ratio? With so many vegetables, won’t they absorb the puree/water? Is it always 1.5:1 or does it vary? I’d almost want to sauté the vegetables separately and add them to the cooked rice. Thx.
The water quantity varies with the recipe. For this recipe, I have added total 1+1/3 cup water considering the spinach puree will add some moisture. This is the amount that worked for me in my trials but it may vary depending on the quality of the basmati rice and vegetables. For example aged basmati rice may require a little more water and more cooking time than the new crop. You could add the sautéed vegetables to the cooked rice if you prefer.
