If you think this is molecular cooking, you are wrong... this is modern cooking, very different that tries something new but doesn't destroy food... i think they are two talented guys that are trying to make tradition a bit more interesting

Restaurants in Italy have change very much since last 10 years at least. Onestly I haven't understood what they cooked, but in terms of presentation now also in Italy is like this. Those saying this is not Italian are perhaps referring to unprententious "Trattorie". But where is the first and second part of the video, I will maybe understand better seeing the whole video.

The food reminds me of the restaurant On Kitchen Nightmares where Gordon told the chef his food was too complicated. I think it was in Scotland.
The portions in Casamia's dishes look very frou frou and not what I think of as Itaian, but whatever

After Mr. Ramsay has humiliated enough Italian restaurant owners in America, he finally have some good things to say about a good Italian restaurant.
second generation Italians owner are not cooking Italian. I'm Italian and very passionate about food and I tell you, came here in Italy and eat traditional Italian food. Most of that you eat in USA, UK, etc. is not Italian but is a mix..

Too much fucking around. Covering up that you don't get much food and will still be hungry. Also having Italian parents doesn't make an Italian restaurant

Casamia was one of Ramsnay's worst decisions and shows that he values style over substance. I wouldn't touch that food with a ten foot poll let alone feed it to my dog. The East Indian wins hands down.
