My Mexican American mother used to tell me not to add salt to the pinto beans because they would not soften. So when someone asks me why I don't add salt right away, I say, "because my mother told me not to". Also, I noticed you pronounced feta and fasolada the same way I pronounce it in Spanish. Loved the recipe. I am trying it right now. So far so good. I love Greek food. My trip to Greece was a dream come true.
Hi Dimitra, yes, it is a traditional meal in Bulgaria as well. I soak the beans for at least 12 hours, then I boil them for 30/40 minutes in a separate pot, while I cut the vegetables, and change the water. I prefer the carrots to be finely grated and add a bell pepper as well and 1 or 2 whole small chilly peppers (my father calls them communists). In Bulgaria we add instead of oregano, dried savory. It becomes really delicious if you cook it slowly old style, using wood in a clay pot. Thanks Dimitra!
Hi from Australia. I have just put my beans on to simmer and the aroma is lovely. I have never made bean soup before so fingers crossed for me. I soaked beans over night only thing I did differently was that I boiled beans to a boil and drained x3. Before doing the final prep and simmering (apparently it helps with the flatulence that I get when I have had fassolatha.).
That was exactly what my mom used to make, but she used Great Northern beans. Not sure if it's the same as cannellini beans. I wish if you get a chance, you can do lentil soup and chick pea soup. No rush!

I am so happy I found your channel! I am disabled because I have a very difficult time eating. I live on soup but lately I have had problems with meat. I can digest beans (weird I can eat beans but not steak!). I want to make this soup really bad today but I only have a few hours. Have you ever Quick Soaked the beans for this recipe? I rinse my beans then cover by 2inches of water, bring to a boil, remove from heat and cover. Then let sit for 1 hour. Drain and rinse beans then continue on with whatever recipe I'm using. I don't cook with cannellini beans much and I have some that I want to use. Thanks!!

I have never put acid in my beans before they're fully cooked. I lived in high altitude for years though. Do you think that altitude makes a difference? This looks great. Thank you. I've been wanting a new recipe for beans.

I think 12 cups of water is too much. I added 1/2 of that. Your other recipe for Fasolada using cooked beans, uses all the other same measurements and also only uses 6 cups of water or broth.
Sorry, but in the beans we never put garlic, just dry chopped onion and a soup spoon of tomato paste. Taste the beans with Norway smoked herring with olive oil and a drops of lemon!

Yes it's getting cooler here in the UK too. Fasolada soup is definitely going to be needed.
