Try getting the fish much higher so it smokes it till it dries in Africa they smoke them for hours till it is dry and last for weeks and the meat still stays fresh Try with different wood like oak and different types of trees mate u will love it
Humidity has alot to do with it aswell, less humid the meat will dry out faster. Cold smoking can be great too for just imparting some nice flavour if you are in a colder or more humid climate

Here in Hawaii, Long, sunny days of summer are No problem, but in greenhouse/hothouse will work just fine also. Finished dried fish should look/feel like beef Jerry. My smoker has a fire box separate from the grill drum. So I do not generally use soaked wood. Smoked fish is the bomb. looks like you actually "grilled" them. Proper smoking is a very slow process and it actually preserves the fish by drying it some. Still very good.

My grandad (fisherman from Grimsby) called them the “Sh!teaters of the sea!” 😂 said you always found them near the sewerage pipes having a munch on what came out 💩🤢 never stopped Me eating mackerel but he wudnt touch them 😂 lol
As a South African… and we are the Kings of Braaing. Put your firelighters underneath your charcoal… just enough of both to get things going… then add the rest of your charcoal or wood 😊
every time i see someone catching mackeral my mouth waters, they are the best fish to eat, only when they are gutted straight after catching, fresher the better
Next time butterfly filet, marinate in soy then let dry out in the fridge uncovered to develop a pedicle. Makes a huge difference and you can smoke any fish. Pollock is great. Tight Lines

u should get a different smoker where u dont have to put the fire so close.. also chunks of wood are better.. i smoke eels every year, u brine them, then hang to dry then smoke at 55-65 celcius for 1.5-2 hours... mackerel is about the same.. maybe bit hotter otherwize it could take too long. u could also build one out of wood or sheet metal (stainless pref) could be a video idea. I bought myself a second hand stainless smoker.. still looks new after 30 years.
Was thinking the same mate ,anyone can smash out mackerel by the hundreds , be much more impressed with em taking 40 or 50 max , so that future generations can enjoy em
them taking a few hundred once or twice a year is nothing when commercial companies catch tens of millions each year, get off your high horse and stop virtue signaling
To light a barbecue the best way is to rollup toilet paper soak in cooking oil and light it in the center of the coal like a volcano and it will do the job itself in any weather 😊

if struggling to get coals light use the wifes hair dryer to get some more air to the coals will help get the coals going and ur welcome buddy the apple wood goes really well with smoked fish and chicken and other meats

We do that in Scotland - Arbroath Smokies
The reason that do that in Africa is due to the heat

Great vi, great catch; try lightly oiling the grill bars with a brush when cold then nothing will stick, alternatively, oil the mackerel.

If youre into smoked fish buy a Bradley smoker-fillet mackeral, table salt fillets 30min ,rinse off ,smoke at 180degrees done.

If you're going to be doing a lot of smoking get a chimney starter. One or two pieces of newspaper and it's blazing in 5 minutes. No chemical taste.

No mackerel are on amber because of the factory ships sucking 1000 tons a go , not the little anglers taking some for bait for the year
