    You are CORRECT sir!!!!!! There is nothing better than these cinnamon rolls. I visited Iceland and brought some home. I returned to Iceland 2 years later (2022) and made sure I visited Braud and Co each day and yes, I brought back several and froze them, to parcel them out. Thanks for sharing the recipe.

    Thanks Matt for sharing this video!
    I went to Iceland with my wife in 2018. Fell in love with the cinnamon rolls at Braud. Nothing ever come close in Malaysia.
    In 2023, we went back there with our 2 daughters and guess what? They loved those rolls too!
    I'm gonna surprise them tomorrow 🥲

    These look so delicious! By the way, I really like this style of video where you talk through the recipe process live. I'll watch your videos either way though. :)

      @@matthinkampcooks There's definitely a learning curve with the rolling. It's more difficult than it looks! But they were so delicious, and I can't wait to make them again!

    So delicious! Thanks for the video. Instead of using a spatula or mixer, I put on gloves and kneaded the filling together. I warmed the sugar and marzipan ever so slightly and it was easy to knead and to spread. Now you have me wondering if your king cake would benefit from a high protein 00 flour like Caputo Chef's Flour. I may have to try it.

    • @matthinkampcooks
      @matthinkampcooks  2 ปีที่แล้ว

      Thanks for the tips! When I warmed this filling for my king cake it started to separate and it was actually harder for me to spread, so I do wanna try adding a splash of water next time instead. The 00 flour in king cake is a great idea! If I buy more I’ll have to try it

    The algorithm just presented me with the Braud & Co. actual making of video: th-cam.com/video/Y-afIGNQkeU/w-d-xo.htmlsi=RcnoVRhJxZR7vDx9
    The reason they have more layers is that they roll at the short side, not the long. They only created 6 really wide ones from the recipe, not 12 (and they seemed to toss the end ones). They apply an egg-milk wash to the rolls before powder-sugaring the tops and baking, and they flatten them a *lot*. Just thought I'd let you know the video is available.
    Thanks for tipping me off to these great rolls in the first place. I'd been on a quest to make the Krispy Kreme cinnamon doughnuts, and these are soooo close, except KKreme fries theirs and glazes them.

    You can use the marzipan to either fill bear claws(lil nutmeg and some cinnamon mixed in)or a stollen. May be a little early for that but there's no rule saying you can't have stollen any time of year you want it.

    • @matthinkampcooks
      @matthinkampcooks  2 ปีที่แล้ว +1

      That’s a great idea! Might have to do it

    I read you used 1 packet of yeast but did you use the same amount of water on the recipe? Goodness, my batter started out a real loose that I had to add more flour. Did you use a small egg? Maybe that was my problem because I only had large eggs..still only used 1.

    • @avissmith6782

      I know what I did wrong.. I misread the flour amount.

    Either way - video or post is great. But if you could tell the UK to be better at having ingredients that would also be great. I am going to Brauð & CO in approximately 48 hours.

    Did you use 1 packet of active dry yeast? Looks like you are holding two but looks like you cut only one open.

    • @matthinkampcooks
      @matthinkampcooks  2 ปีที่แล้ว +2

      Good question. I read that you should multiply fresh yeast by 0.4 if using dry yeast, so I used 9g of dry (23g was the fresh amount). I used one full packet (7g) and then a little bit of the next packet
