I discover your bouillabaisse recipe after I made it following another. I really like it how you chopped the fish and also those fish sortiment used. However, a very great dish
Love poached fennel ànd Artichokes with a nice bowl of melted butter and garlic use fingers dip a layer or leaf in the melted garlic butter and even use a nice french baguette tear a bit off to dip and lay a piece on tasty stuff
The only failure is salmon! The French who make the best fish soup ever only use white fish, and never use oily fish! I was in France in my younger days and in 22 days I had soup de poison 23 times, my young wife was astounded as she did not eat fish.

Looks good but what's up with cooking the mussels in the oven? That's probably super dry. Just steam them and reduce the liquor for the sauce.
