What a talented, down-to-earth bloke. Great explanations, enthusiastic and so respectful of his food producers. We used to take top clients to Pont de la Tour decades ago when I worked in London - still stunning restaurant. Cheers Chef :)

What a pleasure to watch some real beautiful classic cooking for a change, no water baths no pretentiousness.

What a cracking bloke and chef this guy is, no nonsense, great explanations, great dish and maximum use of butter for flavour. One of the best videos I’ve seen

I like that he thinks of the farmers and producers it’s hard work making money as a farmer

The best so far…I do not like a lot of butter in my dishes but after what he said “we cook for flavor and not for health” I can change my mind 😁

Wonderful chef. Well explained recipe and fount of knowledge.
No disrespect to him but had a little giggle at his Pont de las Tour in his del boy accent.
I hasten to add he really is the creme de la menthe.

Lock, stock, and two not smoking, but body temperature, pieces of steel to the upper lip.

We ate at the restaurant a few years ago and it was really crap, 300 quid for three of us, my Paris Brest dessert with mint ice cream was disgusting, duck Parmantier was mediocre, green beans for the table were raw...very disappointing birthday meal
