  • TRINIDAD SPONGE CAKE
    Hi everyone, it close to Christmas again and we know that pretty soon everyone is going to go into their Christmas kitchen routine so today we are going to do a recipe for Trinidad Sponge Cake.
    Everyone has their own way of making sponge cake and this is just a video on how we do it.
    There are a few things I would like to point out about this recipe;
    1. Traditionally, sponge cake was made with common fowl eggs and as a result the cake would end up being a yellow color on the inside. This is not the case here as I used regular eggs from the grocery. If you are lucky enough to get your hands on some common fowl eggs then by all means use them.
    2. In this recipe we used a couple of spices, these are optional, we like the flavor it adds but I know some people don't think a sponge cake should have spices so we'll leave that up to you.
    3. I have no idea where you guys live or what kind of stove you are using or what the weather is like the day you are making the cake so the baking time is an estimate and I even put in the exact time mine took. You will really need to monitor the cake to ensure proper timing for your particular case.
    OK, now that that's out of the way here are the ingredients;
    Ingredients
    3 cups flour
    1/2 tsp. baking soda
    1/2 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. nutmeg (optional)
    1/2 tsp. cinnamon (optional)
    2 cups granulated sugar
    1 cup butter
    4 eggs
    1 tbsp. lemon juice
    1 cup evaporated milk
    2 tsp. vanilla essence
    Bake in a pre-heated oven at 350F
    I really think you guys can give this a try, experiment with the amounts and get a cake the way you want it ;)

    So I made this for Christmas last night and this is how it went:
    1. In the video, you just combined the butter and sugar, I actually creamed it with a hand mixer until the butter and sugar was creamy. And I think because if this, my batter turned out extremely thick. Which, I didn’t mind.
    2. I added ginger
    3.Other than that, I followed the video exactly.
    4. It baked for I think 45 minutes? I didn’t keep track, I just waited until it looked done.
    My mom is from Trinidad and wanted a sponge cake for Christmas and said it tasted like the one she used to eat. And it tastes great so thanks for that.

    Hi I tried your recipe today. I had some challenges I think I used the wrong pan so it was too deep and actually took almost two hours to cook after I checked in at an hour and it was still raw. I added foil over it though and it did the trick to trap the heat and it was actually quite good. Wanna thank you for the recipe.

      You should bake these cakes in a 8 or 9 inch pan, preferably a.9 inch at 350 degrees for around 45 to 55 mins. A spring foam pan is a good pan to use. Grease lightly and flour or use parchment paper.

    Cool recipe and all but it's important to know the recommended baking time. Small things like this can throw off the cake

    I find 1 cup of sugar is sometimes too sweet for the recipes that use 2 cups of flour . I am wondering how sweet it is when you use 2 cups of sugar.

    The colour is perfect however the inside is not dry and mine has been in the over for over an hour. As far as l am aware my oven works fine. I'm thinking if it is left any longer it will burn

      Yes. That is the professional way. You should cream the butter and sugar first for the best results.

    I’ve tried this cake and it came out amazing. I however creamed my butter and sugar for a 15 mins. The only challenge i had was that the flour was too much. I added mines in a batch of 3. And at the 2nd batch it was fluffy, light and airy but by d time i added the 3rd batch, it was a bit heavier and hard to mix. I added more evaporated milk so it wont end up dry. it tasted great and the texture was good as welll but i would try it back with a little less flour because i felt it was a bit dry.

    Crumb on this cake is a lil dense. Flour should be sifted to add air to the batter. 3 cups flour for 1 cake is too much

      Add 1+1/2 ripe bananas in place of the 4 eggs. That's what I do when I need to make eggless cakes.
