Tres Leches Cake:
- 2 Egg Yolks
- 4 Egg Whites
- 100 gr Sugar ( 1/2 cup )
- 130 gr Milk ( 1/2 cup + 1 tbsp)
- 120 gr All Purpose Flour ( 3/4 cup + 1 tbsp)
- 3 tbsp melted Butter
- The zest of 2 Lemons
- The juice of 1 Lemon
- 1 tsp Baking Powder
- 1 tsp good Quality Vanilla
- 1/4 tsp Salt
- 1/4 tsp cream of tartar ( or 1/2 tsp lemon juice to add to the meringue)
Lemon Cream Bath:
- 50 gr Sweetened Condensed Milk ( 1.5 ounces)
- 100 gr Heavy Cream ( 3.5 ounces)
- 70 gr Milk ( 2.5 ounces)
- The Zest of 1 Lemon
- 1/4 tsp Salt
Lemon Mousse:
- 250 gr Heavy Cream (9 ounces)
- The Zest of 2 lemons
- 4 tbsp Mascarpone
- 2 tbsp Sugar
- 1/2 tsp Vanilla Extract

Is it too much to ask for a coffee version? Please....... I made all of your Tres Leches cake (vanilla, strawberry and chocolate) as a layered cake and frosted in between the layers with your stabilised mascarpone whipped cream. Frosted the outside with your Italian meringue buttercream (I added a teaspoon of coffee for a coffee- flavoured version). Then I topped/finished off the cake, with a chocolate mirror glaze and chocolate decor. Shared with my family, neighbors and husband's workmates and every single person was super impressed with your cake flavours....yum. They even suggested I participate in an Australian Bake-off competition! Talk about your talent Emma ☺ I can still taste all of the different flavours, just reminiscing..... made your caramel cake the next day and was absolutely blown away with the caramel/burnt butter flavour. Couldn't stop eating the caramel. It is highly addictive! You're an absolute legend! Must try ALL of your cakes!!! Forget my waistline lol.
Also your recipes are sooo good I’ve tried your Japanese cake & it was a hit with my MOM! she never really like sweets but she wanted more! 💞
