Making this tonight!!!! Substituted it with 2 cups mushroom broth 1 cup vegetable broth. Also only used 2 thighs 2 drumsticks and 1 and half breast meat. Same amount of seasoning didn't have the celery salt tho :( served it with some mash potatoes it came out so beautifully!!!
You sure your not from south Louisiana!! That’s exactly how we cook, I mean you got the seasonings and the Trinity going then you add the Pope (garlic). I love watching your videos because your cooking is so close to ours, good stuff ❤❤

Honestly the amount of seasonings you added looked about right. Go bold or don't go at all( kinds sounds like something Yoda would say,my bad 😁) Anyway, I do have a suggestion to ease up the cooking. After you sear the chicken but before you add your next ingredients pour a little of that chicken stock in the skillet to de glaze it. Myself I might actually pour in a little sweet white wine to speed up the de glazing and add a little bit extra flavor ( after all we do like flavor 😋) but this is a really great looking and easy to do weeknight cook. There's never too much seasoning lol. I saw this one guy put a splash of soy sauce in his gravy but it made me wanna use w-sauce. I wonder what's better. 😊
Generally smothered chicken is coated in a seasoned flour before you pan fry it but it still looks delicious 😋 we call this stewed chicken not smothered.

Is this just an updated video? Because it looks like you have about the same preparation method. I already told wife about the other recipe and we were planning to make it, then we saw this one too. Same thing, right?
@IVC ... We made it over weekend (10-04-2024), and it was the best thing ever. And, I swear to you that this will be on a rotation in our family forever. However, we are going to FORK your recipe and do a re-make this week. We didn't like how the skin tasted after it was cooked. Then, I didn't like how we had to DO WORK on the chicken after it was cooked, such as separating the good meat from the grit as we ate it. So, she is gonna do chicken breasts, cook them (just like you), then shred them at the end, and put them back into the sauce. Then, it's gonna be easier eating and no issues dealing with the slimy and fatty skin. And, she upped the sauce, because it was WELL WORTH making a lot of it. Thanks. It's an excellent FOREVER recipe !!! --> Also, Everyone, use a braising pan (if you have one), and treat it like you are braising the chicken with lid covered. It makes all the difference, and it becomes very soft and tender. --> ALso, our thighs came out better than the legs, especially after we took the skin off when eating. Maybe, Wife left the chicken in too long, during the braising, but it was so tender. Yet, the skin was slimy and not appetizing at all.
