You can substitute whole wheat flour for up to half the regular flour. If kneading it (for at least 10 minutes), it doesn't need to rest for 24 hours, only about 1 1/2 to 2 hours in a warm place, but it doesn't develop more flavor and texture if you don't let it rest the full 24 hours. You also have to increase the yeast measurement to 1 teaspoon so it rises faster.
Hello hi ya' doin', I'm confused by the amount of flour in your ingredients. You say to use 4 cups flour (1 lb 1 oz) but 4 cups weigh 21.5 oz. Three cups weigh 17 oz (1 lb 1 oz). Do you mean 3 or 4 cups? Also, do you ever score the top of the loaf before putting it in the oven?

4 cups is actually 1 lb and 1 oz since 1 cup is 4 1/4 ounces. I do score the top before baking I just forgot to do that when filming this video.
