Roll the dough into itself, pinching it in at the top for 1-2 minutes. Let rise for 30 minutes. Preheat oven with Dutch oven to 450°F Transfer bread with parchment paper into Dutch oven. Bake 30 minutes with lid on. Bake 15 minutes without lid. Tap the bottom. If it sounds hollow its done. Wait for bread to cool.
@@aylahunny3754 I tried it... didn't have time to let it prove over-night thought, only gave it 4 to 5 hours because I was hungry and had no bread in the house lol. It didn't come out good... either I had to prove ot more or had to add more flour and knead it more... I don't know. Very over-hydrated... and no browning whatsoever.

I made this for the first time today and it was amazing! I let it sit for 12 hours. I don’t have a dutch oven, so I skipped preheating the pan. For the baking part that required a lid, I just put the dough in a 9x9 pan and with foil on top (leaving enough room in the middle for the bread to rise with tightly sealed edges). Husband and I instantly agreed this will be part of our regular meal plans!

@@missmayflower mine didn't rise as much as it should the first night. I think my condo was too cold (around 70F). The next day before baking, i let the dough rise in the oven at 80F for an hr. It doubled in size. Im also using 2.5yr old yeast thats been in the fridge. So who knows. But it was good bread. Will try again.
Hello Becky, I saw you making this bread in a newer video and tried making it a few times and it came out amazingly. My boyfriend saw how easy it was and asked if he could try making it. We now start a dough every Thursday or Friday evening (depending on if I work Saturday) and has freshly baked bread for our weekend breakfast. We've tried adding different kinds of flour, spices, seeds, nuts and even dried fruits to it and it comes out perfectly every time. So thank you for inspiring both me and my boyfriend to start baking bread
@ameesha gupta I used a mix of wheat and rye in different configurations and found that that about 380 grams (about 13 oz.) of wheat flour to 100 grams (about 4 oz.) of rye flour worked best for me. My suggestion is to try out different combinations to see what works best for you and your family
The last time I made bread, I couldn't figure out why the leftover portion was undercooked. The first part of the loaf was absolutely perfect. Now I know why! Thanks for the tip at the very end--if you're not going to eat it in one sitting when it's warm, wait until it has cooled completely. And it was probably not the best idea to keep the leftover portion in plastic wrap before it cooled either. Lesson learned! 😂

Becky, I added 2 tbsp of buttermilk powder and it took that loaf to another level. Softer, favorable and helped rise better in our 🇨🇦 elevation. Give it a try and hope this helps others.

I also make this bread recipe every night actually! i have a family of 6. i put plastic wrap on top of my bread overnight to keep it from getting the hard dry spots on it. i also reuse the plastic wrap so I'm not wasting. This is a family favorite. Absolutely love watching your videos!!

There’s a shorter version of this same bread on ‘Jenner can cook’. I believe the wait time is three hours. Everything else is done the same! I am not a bread maker but an eater. I’ve run from bread making because of the time dedicated to making it. But after I saw I could have bread in four hours total I just had to make it and let me tell you. I was so happy I could make it myself.

Oh yeah I live in North central Washington in a small town called Bridgeport and live right along the Columbia River and Chief Joseph Dam is what started this little town. It's north of Grand Coulee Dam.
I have made this bread before and it is wonderful! I do prefer a chewier crispy crust, so I wrap in a damp, warm Birdseye cotton cloth to put some moisture back into the crust right before serving, if it sits for more than an hour before eating.
@@juliabrown5948 I think so, also, if I have something cooking over the stove that’s producing steam, I’ll literally put a rack over the pan and steam some more moisture into the loaf. I only have to do this if it’s prepared too early for dinner, or a leftover half loaf bread that’s gotten too hard sitting out. It’s quite perfect right out of the oven.

I bake a very similar loaf to this, the only difference is I only leave it to rise for about 3 hours. It comes out perfect every time and means you can make it on a morning for fresh eating that day.
Just prepared the dough last night and made this bread this morning. This is the first bread loaf I’ve ever made. It came out amazing! Taste great and the crunch was everything I wanted and the inside was so soft. I’m so happy I tried this recipe. I did use instant yeast and it still came out great.
I started doing no knead when the pandemic started. I do it all the time we never buy bread anymore. I have shown other people the method as well. It’s fantastic I have a go to recipe I use so it’s easy
@@juliabrown5948 yes if it’s for sandwiches I proof in a loaf pan if i want a baguette I proof on my baguette pan. I made the one Becky made in the video I use my cast iron. It’s so easy just do it once then you have a point of reference.
I've been using this exact same recipe for several years. I have had some of my coworkers ask me to become a baker because it is so fantastic. Sometimes I will add roasted garlic and shredded asiago cheese.
This bread is fantastic. I have been wanting to make this for ages, I actually have made three loaves this week. And is simple I had spinal neck surgery two and half weeks ago and I was able to make it. I cooked it in my multi function oven that has a bread setting on it and it baked absolutely perfect without a Dutch oven.
@@bluebirdhomestead it was not fun but very necessary to maintain my spinal cord for a little longer. Has healed very well, just the pain levels slowly decreasing now. And to build arm and neck strength back as much as possible.
Dear sweet Mama, I'm actually getting ready to stir up my 2nd loaf of this bread just this week alone. Oh my, it's so easy and good. I like this recipe and the fact you put it in a Dutch Oven to cook it. It gave me an idea to try cooking my Jalepeno Cheese Pull Apart Bread in a Dutch Oven next time instead of on a baking sheet like I normally do lol.

I modified a little by adding 1 Tbs sugar & 1/2 C chopped Kalamata olives......Also, I only proofed for 6 hours bc I needed bread today & not tomorrow & it STILL turned out. YUMMO!!! PERFECT spring & crumb with a rustic, crunchy crust. THANK YOU for this recipe! Hi friend, I did this the first time perfect. The next time it was a disaster. Took two more tries. I was frustrated at that point and just used the measuring cups without PROPERLY measuring the flour. I was used to the dip a smaller measuring cup to fill up the measuring cup and lightly level the top method. I realized you didn't do that in this recipe. You just dug right in! So I did it too and It turned out perfect! So this is the one bread recipe I use where I gotta remember that! I started watching your more recent videos where you're measuring correctly and even use a scale to get it right! You are so awesome and very helpful. This is my absolute go to for this rustic loaf!

I have been baking bread for years of various types. Sourdough is our favorite but I don't have a starter right now and tried this recipe - WOW - we love it. Tis a close 2nd to the sourdough. I love that it doesn't mold like a lot of moister breads do - and it's not dry. Love the texture - just love this bread. I am back here to get the recipe printed to get another loaf started tonight. We love that bread at our house❤️ I googled and got measurements for 3.5dl of water and approx. 445g of flour, it has turned out to be some fantastic bread every time! If there are others who don't use cups 😊 I can also recommend making it on the grill!. 😍

Great recipe. A couple of stretch and folds during the proofing process whenever you get time will go a long way opening up the crumb if you like that style
I made this today. This morning I put the dough together, and let it sit for 3 1/3 hours, then I removed it and rolled it up, added it to the parchment paper, set it aside, and got my oven ready. 475 degrees with my pan inside, then I baked it exactly like you said and it came out PERFECT! So really no need to wait that long either. TY girl, it's amazing bread!

I made this bread with quick rising yeast and a covered casserole dish. It turned out great. I let it sit on the counter about 7 hours instead of 12-18. The whole family likes it as well as the Pane Turano Italian Bread we like from Aldi. Yay! One less thing to be dependent on from the store.

I just made this and OMGGG it’s so good y’ll! Some of the best bread I’ve had in a very long time. I baked mine an extra ten minutes in the oven because my oven isn’t the greatest and it turned out perfect! Thank you so much for the recipe
@@Melindalot I use 113g of 100% hydration starter, 340g water, 567g flour, 11ish g salt. Mix and let it sit 12-24 hours. Shape the dough and let sit for 3-5 hours. Score dough. Bake covered in preheated (450 degree) Dutch oven for 25 minutes. Remove lid and continue baking for 25-35 minutes. Let cool completely. No kneading, just time.
Becky, thanks to this video I baked my first loaf of this bread today. I used wheat flour and forgot the 30 minute rise and it still came out great I have a dough mixed up using white flour sitting on my counter now. 😊 I also bought the bakers flour from azure that you use. It bakes up so nice!

Becky I made Oatmeal bread from the King Arthur's website today, honestly the best bread I have ever tasted in 50 years. The only tip I have is that someone told me to use 1 tbl of blackstrap molasses along with 2 tbl brown sugar and it makes all the difference in the world. I wish I could add a photo, also made in KitchenAid so no hand kneading which is great for my arthritis.
I baked one with whole grain wheat flour and it turned out delicious! My partner loved the bread so much 😌🍄🖤 I'll be baking this forever hihihi no more buying bread from the store ✨ [Edit: this is great for those with chronic pain, i suffer from fibromyalgia and this was basically painless to make.✨]

Love it. Use a plastic shower cap sprayed with Pam to cover the bowl. I use mine over and over again. It's the best to cover all my sourdough loaves. I add a stone pizza round on the bottom rack so the bottom of my loaf NEVER burns.
I am always looking for EASY recipes for bread. I immediately tried this after watching your video and baked it this morning so it was sitting for about 18 hours. I totally forgot to let it rise another half an hour, I also had to bake at 425 instead of 450 because I had to use a covered glass casserole dish because I don’t have anything else, I baked for 40 mins and another 10 for the browning and it STILL turned out perfect. I probably won’t ever use another bread recipe after this, thank you!

Oh Becky! I can't thank you enough for this super easy loaf recipe. Last night I made a double batch and let it proof over night. Today I baked them up and oh it was so yummy!! Next time I may add some herbs and garlic. To have another variation. The bread crust is amazing and I baked it up in my lodge cast iron Dutch ovens. I plan to make these loaves as gifts for friends and family. Again, thank you for showing step by step how to make this. Im using a large cast iron pan and a metal collander flipped upside-down and wrapped in tin foil. Just made the shaggy dough tonight.
It’s well worth getting a Dutch oven for this. It also has many other uses, especially simmering soups and stews.

By far the best bread for fall and winter! I sometimes double recipe and make bread bowls for soups.

If you waited a bit longer after pinching (prior to baking) you'd get more and bigger air pockets and essentially a bigger loaf. 👍

I bought the Danish wisk and love it. I don't have to drag the mixer out or lose the feeling in my arm while mixing. That wisk is a game changer for me. I can't wait to start this bead tomorrow!

I also make this bread recipe every night actually! i have a family of 6. i put plastic wrap on top of my bread overnight to keep it from getting the hard dry spots on it. i also reuse the plastic wrap so I'm not wasting. This is a family favorite. Absolutely love watching your videos!!

There’s a shorter version of this same bread on ‘Jenner can cook’. I believe the wait time is three hours. Everything else is done the same! I am not a bread maker but an eater. I’ve run from bread making because of the time dedicated to making it. But after I saw I could have bread in four hours total I just had to make it and let me tell you. I was so happy I could make it myself.

Oh yeah I live in North central Washington in a small town called Bridgeport and live right along the Columbia River and Chief Joseph Dam is what started this little town. It's north of Grand Coulee Dam.
I have made this bread before and it is wonderful! I do prefer a chewier crispy crust, so I wrap in a damp, warm Birdseye cotton cloth to put some moisture back into the crust right before serving, if it sits for more than an hour before eating.
Does this make it less tough to bite through? My kids don't like really tough crust but I really want a simple bread like this!
@@juliabrown5948 I think so, also, if I have something cooking over the stove that’s producing steam, I’ll literally put a rack over the pan and steam some more moisture into the loaf. I only have to do this if it’s prepared too early for dinner, or a leftover half loaf bread that’s gotten too hard sitting out. It’s quite perfect right out of the oven.

I bake a very similar loaf to this, the only difference is I only leave it to rise for about 3 hours. It comes out perfect every time and means you can make it on a morning for fresh eating that day.

Just prepared the dough last night and made this bread this morning. This is the first bread loaf I’ve ever made. It came out amazing! Taste great and the crunch was everything I wanted and the inside was so soft. I’m so happy I tried this recipe. I did use instant yeast and it still came out great.
I started doing no knead when the pandemic started. I do it all the time we never buy bread anymore. I have shown other people the method as well. It’s fantastic I have a go to recipe I use so it’s easy
Do you use it for sandwiches, toast etc? Isn't the crust too tough for that?
@@juliabrown5948 yes if it’s for sandwiches I proof in a loaf pan if i want a baguette I proof on my baguette pan. I made the one Becky made in the video I use my cast iron. It’s so easy just do it once then you have a point of reference.

I've been using this exact same recipe for several years. I have had some of my coworkers ask me to become a baker because it is so fantastic. Sometimes I will add roasted garlic and shredded asiago cheese.
This bread is fantastic. I have been wanting to make this for ages, I actually have made three loaves this week. And is simple I had spinal neck surgery two and half weeks ago and I was able to make it. I cooked it in my multi function oven that has a bread setting on it and it baked absolutely perfect without a Dutch oven.
Did you use some type of pan to bake yours in or was it just set free-form on the rack? Thanks
@@lisamartin3346 I used a bread loaf pan for one loaf, then I used a round cake pan for two which turned out much better.

@@bluebirdhomestead it was not fun but very necessary to maintain my spinal cord for a little longer. Has healed very well, just the pain levels slowly decreasing now. And to build arm and neck strength back as much as possible.

Dear sweet Mama, I'm actually getting ready to stir up my 2nd loaf of this bread just this week alone. Oh my, it's so easy and good. I wrapped mine straight from the oven into a towel first thing from the oven and you're right, the crust was soft and pleasantly chewy! Thanks for sharing a simple but great recipe!!

Just made this AMAZING perfect bread today... I modified a little by adding 1 Tbs sugar & 1/2 C chopped Kalamata olives......Also, I only proofed for 6 hours bc I needed bread today & not tomorrow & it STILL turned out. YUMMO!!! PERFECT spring & crumb with a rustic, crunchy crust. THANK YOU for this recipe! I'll be adding roasted garlic & fresh chopped tomatoes to my next loaf and chopped red onion & grated Romano cheese to another. LOVE this recipe!!!!
I’ve made this bread dozens of times. It’s so easy and delicious! My husband requests a new loaf even before he’s finished the current one. We like to make garlic toast out of it. We also enjoy your one hour dinner rolls.

Hi friend, I did this the first time perfect. The next time it was a disaster. Took two more tries. I was frustrated at that point and just used the measuring cups without PROPERLY measuring the flour. I was used to the dip a smaller measuring cup to fill up the measuring cup and lightly level the top method. I realized you didn't do that in this recipe. You just dug right in! So I did it too and It turned out perfect!
So this is the one bread recipe I use where I gotta remember that! I started watching your more recent videos where you're measuring correctly and even use a scale to get it right! You are so awesome and very helpful. This is my absolute go to for this rustic loaf!

I have been baking bread for years of various types. Sourdough is our favorite but I don't have a starter right now and tried this recipe - WOW - we love it. Tis a close 2nd to the sourdough. I love that it doesn't mold like a lot of moister breads do - and it's not dry. Love the texture - just love this bread. I am back here to get the recipe printed to get another loaf started tonight. I googled and got measurements for 3.5dl of water and approx. 445g of flour, it has turned out to be some fantastic bread every time! If there are others who don't use cups 😊

Great recipe. A couple of stretch and folds during the proofing process whenever you get time will go a long way opening up the crumb if you like that style

I made this today. This morning I put the dough together, and let it sit for 3 1/3 hours, then I removed it and rolled it up, added it to the parchment paper, set it aside, and got my oven ready. 475 degrees with my pan inside, then I baked it exactly like you said and it came out PERFECT! So really no need to wait that long either. TY girl, it's amazing bread!

I made this bread with quick rising yeast and a covered casserole dish. It turned out great. I let it sit on the counter about 7 hours instead of 12-18.
The whole family likes it as well as the Pane Turano Italian Bread we like from Aldi. Yay! One less thing to be dependent on from the store.

@@Melindalot I use 113g of 100% hydration starter, 340g water, 567g flour, 11ish g salt. Mix and let it sit 12-24 hours. Shape the dough and let sit for 3-5 hours. Score dough. Bake covered in preheated (450 degree) Dutch oven for 25 minutes. Remove lid and continue baking for 25-35 minutes. Let cool completely.
No kneading, just time.

Becky, thanks to this video I baked my first loaf of this bread today. I used wheat flour and forgot the 30 minute rise and it still came out great I have a dough mixed up using white flour sitting on my counter now. 😊

Becky I made Oatmeal bread from the King Arthur's website today, honestly the best bread I have ever tasted in 50 years. The only tip I have is that someone told me to use 1 tbl of blackstrap molasses along with 2 tbl brown sugar and it makes all the difference in the world. I wish I could add a photo, also made in KitchenAid so no hand kneading which is great for my arthritis.
I baked one with whole grain wheat flour and it turned out delicious!

Love it. Use a plastic shower cap sprayed with Pam to cover the bowl. I use mine over and over again. It's the best to cover all my sourdough loaves. I add a stone pizza round on the bottom rack so the bottom of my loaf NEVER burns.

Corning ware(stone ware) works for me. Same material as a crock pot.
I am always looking for EASY recipes for bread. I immediately tried this after watching your video and baked it this morning so it was sitting for about 18 hours. I totally forgot to let it rise another half an hour, I also had to bake at 425 instead of 450 because I had to use a covered glass casserole dish because I don’t have anything else, I baked for 40 mins and another 10 for the browning and it STILL turned out perfect. I probably won’t ever use another bread recipe after this, thank you!

Oh Becky! I can't thank you enough for this super easy loaf recipe. Last night I made a double batch and let it proof over night. Today I baked them up and oh it was so yummy!! Next time I may add some herbs and garlic. To have another variation. The bread crust is amazing and I baked it up in my lodge cast iron Dutch ovens. I plan to make these loaves as gifts for friends and family. Again, thank you for showing step by step how to make this. I would absolutely love it if you demonstrated some other bread recipes as I am just getting started in bread making. Just a thought.
