I made this yesterday and it is super yummy! I have made lemon drizzle cakes in the past that got too soggy from the syrup, so I only added half of the syrup to this loaf. It could definitely had taken more syrup, but it turned out delicious never the less! I also only had one lemon, so I used lime and a little bit of orange too. It tastes even better the next day. Will definitely be making this again and again and again!
This recipe is a keeper! I poured all of the lemon sauce into the tin so the cake was a lil sour. In future i’ll cut the quantity to 1/2. Thank you Jemma for the awesome recipe ❤️
I made this cake and I really loved it. To my taste, however, it was a bit too greasy and I could taste and smell the eggs, which I didn’t like that much. So I was thinking, why don’t I try it with less butter and fewer eggs. So this morning I made one with only 150 grams of butter and three eggs, and to make up for the reduced moisture, I added about half a cup of plain yoghurt. It turned out delicious.
I have baked this twice now and I found it incredibly greasy with butter too. I thought I was doing something wrong. However, I didnt find that the eggs were an issue in mine, just the butter. I ended up wrapping mine in kitchen roll and letting it sit overnight with cling film too and the excess greasiness soaked back into the cake but also into the kitchen roll which helped absorb some greasiness too. I also cut the actual drizzle sugar syrup in half because the cake would have been way too soggy. Instead, I used half the amount and then used the other half of the lemon amount to make a lemon icing on top. It worked a treat. I think I'll try your trick with reducing the butter. It's such a tasty cake but the greasiness is very off putting and sickly. Thanks for sharing. Lee :)
This is truly classic. This video just popped up on my home page. I have been a subscriber for about a year and a half so I hadn't seen this one. My mother had a great trick. She would mix her citrus zest into the sugar for the recipe and rub the sugar and zest with her hands. It would infuse the citrus oils into the sugar. The citrus flavor in the baked good was amazing. Thank you Jemma for sharing your secrets and the professional instruction without making baking seem difficult. The only question I had was rather or not you were baking fan assisted. I figured out quickly it was not. I would like fan assisted guidance for this recipe if it would work well.

Also, I didn’t add the drizzle and it still tasted lemony and not too sticky, but a simple sponge 😊 I live in Germany and had no self-raising flour. What I did was add three teaspoons of baking powder to 225 grams of type 405 flour, mixed with a whisk then sieved into mixture.

This recipe has been a hit on a scale that I cannot easily overstate. Like seriously. This is the kind of recipe that gets requests from friends. A bazillion thanks for this. I altered Jemma's technique in 2 teensy ways. I lined the ends as well as the sides and bottom. Soaked with the drizzle the heels are their own kind of amazing that way. Also I added about 20-25ml lemon extract and a smidge of vanilla right into the zest during my prep. I compensate for the additional liquid with about 30g of additional flour. Also.. If you think you've poured too much of the drizzle over it, you haven't. Go. For. It.

In the U.S I think the closest thing to this we have is like a lemon pound cake, but it doesn’t have the drizzle it just has a lemony icing on top, I’ll have to try this out!
This lemon cake is to die for!! I had a sweet tooth so I decided to make this. Instead of making the drizzle, I made this other “drizzle” from Jemma’s Lemon Polenta cake which is just lemon juice and icing sugar. Yummm!

i made this today.. the loaf is soft and fluffy.. i was worried at first because the batter curdled a little but it turned moist and delicious after baking. thanks for sharing.👍
Made the cake, came out amazing... So lemony and flavorful... It rose and got a good golden brown color in 40-50 minutes but it had a large hole in the middle almost all the way, like a tunnel... it was still good to eat but I'd love to know what did I do wrong? Did I beat the eggs too much? Too little? Was the oven too hot or not hot enough?
PS.. For Those who are being over critical of Gemma and/or this recipe.. Try to remember gemma did say add to your own taste.. if anythings over greasy its down to your own design.. Gemma sis not cook your cake? 🤪🤣 😆 REMEMBER.. A GOOD WORKMAN NEVER BLAMES HIS OR HER TOOLS... Moreover their own perception, understanding and execution 😉 Thanks again Gemma... YOU ROCK!! X

Yay...somebody who doesn't grease and flour the tin! I totally agree - almost always creates a floury, flaky mess on the sides of the cake. I find a light greasing, lined with parchment and lightly grease the parchment ( I use veg shortening and a pastry brush) works like a charm on cakes. Nothing nicer than a slice of a good lemon drizzle cake with a cup of tea. Sigh ! Civility at it's best. Going to make this soon 😋

I LOVE lemons! This cake reminds me of a lemon pound cake I make but I dont have such a thin lemon & sugar mixture over top. Mines usually a bit thicker icing but I love this way, I'm going to try it this way next time. 💕
Dear Jemma, I just tried baking one today and the cake turns so well risen which I love!!! I put golden raisins and chopped pecan to my taste. As to the baking time, it took me more than 55 minutes, I think about 70 min or so. Much much thanks for sharing. Look forward to more of your homebake recipes!
Thank you! Could you plz do a basic video regarding what each ingredient does in baking? Why do scones turn out as scones and cupcakes turn out soft etc?
One thing i'd recommend for drizzling the cake: instead of pouring it straight from the jug, use a pastry brush to coat it more evenly. If you dont have one, a clean paint brush, makeup brush, or even a teaspoon will also work just fine. edit: also, if you want the classic white, hardened drizzle for decoration or taste, use icing sugar instead of caster sugar for the drizzle - thats literally the only difference.

Gemma, i just finished baking my 2nd lemon loaf from Laura in the kitchen, and i did use a little more yogurt/milk, and pan did look too full, and it spill out! funny the part that spilled out onto a flat pan i always keep in the oven, didn't burn, but cooked as well, and became a wonderful treat 4 me!! my cake was flat, and browned around edges 1st, so wonder if what u said about the lemon zest/juice was true??? when i baked this loaf previously, it came out perfectly, both to view and to taste!! would love your opinion, and love 2 make your recipe, though need measurements in American cups, please???:): kelli

If you make your own self-raising flour - use 225g plain/all purpose flour with 3 tsp of baking powder :)

pro tip: mix the zest and sugar separately with a fork or ur fingertips to get it to mix in properly without lumps and infuses the sugar well !!

I LOVE lemons! This cake reminds me of a lemon pound cake I make but I dont have such a thin lemon & sugar mixture over top. Mines usually a bit thicker icing but I love this way, I'm going to try it this way next time. 💕
This drizzle is great because when it dries it leaves a lovely crispy crunchy layer on top x
Dear Jemma, I just tried baking one today and the cake turns so well risen which I love!!! I put golden raisins and chopped pecan to my taste. As to the baking time, it took me more than 55 minutes, I think about 70 min or so. Much much thanks for sharing. Look forward to more of your homebake recipes!

One thing i'd recommend for drizzling the cake: instead of pouring it straight from the jug, use a pastry brush to coat it more evenly. If you dont have one, a clean paint brush, makeup brush, or even a teaspoon will also work just fine.
edit: also, if you want the classic white, hardened drizzle for decoration or taste, use icing sugar instead of caster sugar for the drizzle - thats literally the only difference.

Gemma, i just finished baking my 2nd lemon loaf from Laura in the kitchen, and i did use a little more yogurt/milk, and pan did look too full, and it spill out! funny the part that spilled out onto a flat pan i always keep in the oven, didn't burn, but cooked as well, and became a wonderful treat 4 me!! my cake was flat, and browned around edges 1st, so wonder if what u said about the lemon zest/juice was true??? when i baked this loaf previously, it came out perfectly, both to view and to taste!! would love your opinion, and love 2 make your recipe, though need measurements in American cups, please???:): kelli

I've chucked the zest of an orange in too cause my lemons were a bit tiny & we like a strong zesty taste. Hope it's yummy, currently in the oven.
