Ingredients:
- 225g (1 cup) unsalted butter, softened or margarine - See NOTE:
- 225g (1 cup + 2 tablespoons) caster sugar
- 4 large eggs
- 225g (1 3/4 cups) self-raising flour, sifted
- Finely grated zest of 1 lemon
- For the Lemon Drizzle:
- Juice of 1 1/2 lemons
- 85g (2/3 cup) icing sugar, sifted
Zest for garnish
I use a 10 x 5 inch loaf tin
Note: Not all countries are fortunate to have butter as an ingredient, I realise that - Feel free to use whatever you can. I am also aware of the commentators regarding trans fat - however, we all have choices when surrounded with the perfect ingredients, whether to use or not!

Air fryer 320°F (165°C) 40 -45 mins

This is my favourite cake. My mom always used margarine for her cake and replaced 2 tablespoons of flour with 2 of cornflour. She said it made her cakes lighter. She always used butter for icing though…margarine in icing does not taste good!

Where the ingredient quantities
That is a perfect, scrumptious classic lemon drizzle. I can smelt from here!!
I use the leftover lemon peels for cleaning. Put into pot with water to cover, boil 30 mins, discard peels. You can bottle this, save in fridge, for cleaning kitchen area, floors, bathroom, etc. Mix in vinegar and use in spray bottle to clean your windows.
Totally non-toxic, pet- and child-safe.
I use this all the time to clean my toilet, the citrus oil is nice.

My daughter and I have just made this, no electric whisk though just old fashioned elbow grease, teaching her the old fashioned way. Will update once it`s cooked, iced and we have tasted it although my mouth is watering already with the smell of the lemon in the kitchen.

Just made the Lemon Drizzle Cake, absolutely fantastic! I do not think it is gong to last long! Going to make your Bread Pudding on the weekend, in Wales we call it Puddin Bara, never made it with Evaporated Milk before sounds fab! A nice recipe for a lemon cake! I'll try it in this version. My tip: If you don't have a zest ripper, you can also use a peeler and then chop it with a knife. I do this with my orange marmalade, for example. 👍

Do you use non-stick or dark tins? I know they say to put the temp of the oven down 25 degrees if you do. Just want to make sure cake comes out as nice as yours. - From Wisconsin
This tin is non-stick with the baking paper in. Some folks make cake by butter out and add a coat of flour. I prefer not it leaves a film on the cake. That's is why I use this method. Love to Wisconsin. Best, Rik
