That's great mate ! Loved the video . I got the taste for English style marmalade when I was in the RAF back in the late 1950s. Back in Canada I buy Roberson the Scottish kind, but it's too dear for my taste for a small jar. The Canadian or should I say the North American style of Marmalade doesn't come even close for the authentic Marmalade. One question: Will the taste or texture be effected if the amount of the brown sugar is cut in 1/2, and the amount of white is also reduced. Thank you
Hey Charles that's great! We love English bitter marmalade. Half the sugar... hmmm, the sugar helps it to gel, so I would guess it would be much more runny and a little less sweet. All you can do is experiment and give it a try on a very small batch. Be sure to let us know how you get on!

@@VellaCharles yes it does, as well as act as a preservative. The Orange and especially the pips contain pectin also which also acts as a gelling agent. Be sure to let me know how it turns out! and remember you need bitter oranges for a bitter marmalade!
Rach here, love this video! My favourite jam is rhubarb and lavender. With the orange jam, if I use normal sweet oranges could I leave out the sugar or use much less? What do you think?

This is the info I found. *Jams and Jellies with Honey* _Honey may be substituted for sugar in most jam and jelly recipes. If a recipe calls for 4 cups of sugar, use 2 cups of honey. Cook the jam slightly longer than the time stated in a recipe using sugar._ It will probably need a little experimenting with, so make a few small batches, and once you got it right scale it up!..... and let me know the recipe! lol,. Maybe we can make a video on it in the future.
