How to Make Red Grapefruit Marmalade

    Red grapefruits are available all year round (unlike Seville oranges) and make a delicious fruity marmalade. Adding crystallised ginger gives an extra tang and enhances the flavour of the fruit. To calculate the weight of the sugar, multiply the weight of the grapefruits by one and a half, so 2 pounds of grapefruit need 3 pounds of sugar. There is no need to measure the amount of water - just make sure that there is just enough water to cover the chopped fruit when you leave it to soak overnight.

    I just grate the whole grapefruit skin until I get to the grapefruit itself. Pieces comes out nice and thin.

      How did it turn out I am making it now did you make candied ginger or have some already made? I have never heard about candied ginger I must be living under a rock

    I never knew what to do with all the grapefruit from my tree (you can only eat so many fresh grapefruit!) and now I know to make marmalade. Thanks so much.

    Highly recommend this recipe. Huge success with yellow grape fruits also... Just a quick note that I used my pressure cooker for the cooking of the fruits cutting down the cooking time dramatically. Didn't have to wait for the overnight soaking just 20 minutes in the pressure cooker and then very quickly adding the sugar bringing it quickly to the boil a couple of times and ....done!!!

    Hello Shinica, The weight of sugar given in the instructions is the right amount to take away the bitterness.

    Thank you. This was really helpful. The local grapefruits here in Sri Lanka are a little bit different (lighter in colour), but it came out quite well.

      Glad to hear you got a good result! All our grapefruits here are imported, so we can buy the standard yellow ones, which I am guessing are like the ones you used, and are labelled as white grapefruit, and also we get pink and red varieties. They all work equally well for marmalade.

    I am working on my peels right now but I am so curious about candied Ginger. Now I am wondering if while it’s resting overnight I make some of this ginger with all the sugar I would think raw ginger would be alright after canning and time but I do not want to ruin this. Any suggestions?

    I make my own sloe gin and it is v. sweet so a glass of that would make an interesting addition.

      Neat gin would do the trick. With sloe gin you would be adding extra sugar which you don't need with jam. The alcohol helps the jam keep.

      It is the proportions of sugar, acid and pectin that give the set. Reduce the amount of sugar and you will have a runny compote that won't keep.

      With all the sugar in the recipe no, just a citrus tang.

      Pineapple? No, that won't work. This recipe is for grapefruit.

      李怡錚 No, I have never done pineapple jam. Pineapples are very low in pectin and have to be combined with high pectin fruit or have pectin added.
      Why don't you do pineapple chutney?
