Ex this video Food processor or not/canning equipment or not “Don’t Worry”. This makes people of all culinary levels feel as if they can take on the task and without judgement. Dear Mary, I tried this recipe and it turned out so nicely! I had never made marmalade before. I am a 31 year old woman, and I have been learning to can and preserve over the past year, as part of preparing for starting a family in these uncertain times. I learned so much about how to activate natural pectin from testing this recipe - my marmalade set up beautifully! I have never been able to get a jelly or jam to set well before. Thank you. I use a zester that I found at my local grocery store. The zest comes away in very thin narrow strips, perfect for marmalade. Made orange marmalade and it was wonderful!!! I store my rings on stainless standing paper towel holders and have one for regular rings and one for wide mouth . Works great!
It is the beginning of citrus season here in Texas as you well know. I wanted to just can some of the fruit but I saw a video listed on marmalade. So I jumped over here to your channel to see how to do the job well. You are so meticulous and it gives me confidence the time and effort will pay off following your instructions. But here's my question: Once you've completed the cooking and it is 'complete and just right,' doesn't the water bath canning cook it more and make it gummy and gooey? Hi Sandra, Please forgive the delay. This is an older video so I don’t always see the comments right away. The water bath canning process is relatively short. It’s not like pressure canning. And water bath canning is what is recommended by the National Center for Home Food Preservation to make the marmalade shelf stable so the marmalade should be fine. But you can always just refrigerate it if you are worried. Just follow the recipe. Good luck! Love, Mary❤️🤗❤️

I love making orange marmalade, and I make mine very much the same as you do. A tip is to place your cutting board inside a sheet pan to catch the juice.

Wonderful video!! So much love (you MUST know Jesus!). We do exactly what you do but squeeze the fruits after removing zest and we use orange juice with pulp instead of water!!

I don't keep the rings on my canned food so like you I've ended up with a ton of rings I took a whole bag of them to the school for crafts for them I think they're going to use them as frames for little pictures to hang on the tree for their parents I'm not sure but it's certainly a way that was appreciated and I didn't have to try to find a place to put more of the dang things

Hi Mary. I like how you made the marmalade in the traditional way. Do you think monk fruit sweetener would be a good option here? We have a huge orange tree in our yard that yield a lot of bright vibrant beautiful oranges. The color and the citrusy flavor that you will not find in the grocery store. You would be the ideal for my pick your switch Grandmother. Your peel of that Rind was so thin and long! I'd have been cheering myself. Winning! Yea You! Great tips and tutorial on this. Grandmother was not gonna spend a cent on anything she could do without expending money on. She was frugal. So frugal when she died she had a ball of shipping twine the size of a basketball. She saved the paper you wrapped a package in also and just turned it inside out to reuse. I'm thankful you are teaching me the frugal way. I still fear that woman and she's been dead 35 years. New subscriber here. Whoohoo, you're almost to 1000! I lived in Austin many years ago, but still remember the delicious jellies and jams made by New Canaan Farms in Dripping Springs. My favorite was their Citrus Marmalade. I've tried to duplicate it unsuccessfully, but now I know how to do it right. Thank you!
I wouldn't wait to do that til later because the finished product has to be hot to start with. If you choose to not water bath can right away, then think about placing the jars in the freezer for freezer marmalade. Just fill the jars, wait for them to cool, top with lids, place in refrigerator first to come down to temp, then put in the freezer.

Wonderful video. I will be watching them all. :) I do have a question. What happens if you don't bring them out of the hot water straight up? I pulled my jars out sideways because I have a stove fan just above and could not bring them out straight up. I also did not know to do that.

I have a granola bar recipe that calls for marmalade so I'm looking for Orange Marmalade How to videos. Store bought marmalade is pretty pricey. You are very informative . I do have a couple of questions about your technique though. I've heard that metal shouldn't be used as a debubbler because it can scratch the jars. Have you found that to be a problem? Secondly, why did you top off the water level before all your jars were in the canner. each jar is going to displace some water making the level rise. I just keep a tea kettle of hot water nearby & top off if necessary when I have all the jars in place.

Hi Mary. I found this video at the right time! I have a bumper crop of Meyer lemons, oranges and some grapefruits. Two questions. Can I use this recipe for a single citrus flavor and where can I find a 6 cup glass measuring cup. What brand do you use? Thank you!!
Yes, absolutely… this will definitely work for just one type of citrus. The big measuring cup I have is an 8 cup. There’s also a 4 cup. I haven’t found a 6 cup. I found both my measuring cups at local kitchen stores. I’m confident you will, too. And if not, I’m sure you can find them online. Love, Mary.
Mary, could you recommend knives to buy style etc. mainly for chopping...or cutting the orange suprims. There are so many different ones. You are amazing!
PS years ago I read the pith is high in vitamin P ( have no idea if true) but my mother had problem if hands barely knocked would bleed and the P is supposed to remedy that as helps remedy surface spider veins I seem to recall...it worked whatever factor it may have been.

Hi Mary, i made the marmalade following your recipe, I just used oranges, my question is about the color, it didn’t come out orange in color instead it came out very pale orange. Was I suppose to do something else since I used only oranges? Thank you. Florence
Hi Florence, Not sure. It could simply be the type of oranges you used. The thicker skinned oranges generally are more “orange” in color with the thin skinned oranges. But don’t worry. It will be delicious. ❤️🤗❤️

I Love 💙 you and your videos. I’m a newbie and I’m just learning. Before I found you I water bathed pickle beets. Please help me. I washed my jars in warm soapy water then I put them in the oven to keep them hot. When it was time to fill them I pulled them out from the oven then filled them. I did everything that you told us to do except put the jars in the hot water bath water until it was time to fill them (I put them in the oven). Are my beets safe to eat or not? I definitely know the next time to put the jars in the hot water bath water to sterilize them. I noticed in a couple of jars some of the sliced beets were above the liquid but all of my lids were sealed. I didn’t realize how important the headspace was…now I know. Oh boy I think I might rank up there as a “For Sure A Beginner Canner”! I just want to do things safely and properly. Thanks for your help.

I am a 31 year old woman, and I have been learning to can and preserve over the past year, as part of preparing for starting a family in these uncertain times. I use a zester that I found at my local grocery store. The zest comes away in very thin narrow strips, perfect for marmalade. Made orange marmalade and it was wonderful!!! I store my rings on stainless standing paper towel holders and have one for regular rings and one for wide mouth . Works great!

It is the beginning of citrus season here in Texas as you well know. I wanted to just can some of the fruit but I saw a video listed on marmalade. So I jumped over here to your channel to see how to do the job well. You are so meticulous and it gives me confidence the time and effort will pay off following your instructions.
But here's my question: Once you've completed the cooking and it is 'complete and just right,' doesn't the water bath canning cook it more and make it gummy and gooey? Thanks for your patience and help. Jesus bless.
Hi Sandra, Please forgive the delay. This is an older video so I don’t always see the comments right away. The water bath canning process is relatively short. It’s not like pressure canning. And water bath canning is what is recommended by the National Center for Home Food Preservation to make the marmalade shelf stable so the marmalade should be fine. But you can always just refrigerate it if you are worried. Just follow the recipe. Good luck! Love, Mary❤️🤗❤️

I love making orange marmalade, and I make mine very much the same as you do.
A tip is to place your cutting board inside a sheet pan to catch the juice.
So do you make your orange marmalade the same way except you use all oranges?

I don't keep the rings on my canned food so like you I've ended up with a ton of rings I took a whole bag of them to the school for crafts for them I think they're going to use them as frames for little pictures to hang on the tree for their parents I'm not sure but it's certainly a way that was appreciated and I didn't have to try to find a place to put more of the dang things

Hi Mary. I like how you made the marmalade in the traditional way. Do you think monk fruit sweetener would be a good option here? We have a huge orange tree in our yard that yield a lot of bright vibrant beautiful oranges. The color and the citrusy flavor that you will not find in the grocery store. It is a perfect time to make marmalade.

You would be the ideal for my pick your switch Grandmother. Your peel of that Rind was so thin and long! I'd have been cheering myself. Winning! Yea You! Great tips and tutorial on this. Grandmother was not gonna spend a cent on anything she could do without expending money on. She was frugal. So frugal when she died she had a ball of shipping twine the size of a basketball. She saved the paper you wrapped a package in also and just turned it inside out to reuse. I'm thankful you are teaching me the frugal way. I still fear that woman and she's been dead 35 years. New subscriber here. Whoohoo, you're almost to 1000! I lived in Austin many years ago, but still remember the delicious jellies and jams made by New Canaan Farms in Dripping Springs. My favorite was their Citrus Marmalade. I've tried to duplicate it unsuccessfully, but now I know how to do it right. Thank you!

Can I put jars if jam in the water bath canner some days after making the jam so that they are shelf stable?
I wouldn't wait to do that til later because the finished product has to be hot to start with. If you choose to not water bath can right away, then think about placing the jars in the freezer for freezer marmalade. Just fill the jars, wait for them to cool, top with lids, place in refrigerator first to come down to temp, then put in the freezer.

Wonderful video. I will be watching them all. :) I do have a question. What happens if you don't bring them out of the hot water straight up? I pulled my jars out sideways because I have a stove fan just above and could not bring them out straight up. I also did not know to do that.
I use the handle of a wooden spoon to drag a trail through the middle and if it doesn’t immediately fill with liquid you’re good to go ❤️
Hi Mary could u do this recipe but put the zest in a bag so it can be removed afterwards to make a shredless marmalade? Or would i need a completely different recipe.

Mary, why is it important to take the jars out of the canner straight and not at an angle? Does that affect how they seal?
I made the citrus marmalade and it didn’t thicken don’t know why. I followed step by step.pls help. Btw I love all that you share with us.
When you take your jars out of the water and they wet inside, do you dry them or just shake out the excess water?

Hi Mary! I love your channel. Im wondering if you can double this marmalade recipe.
I have a granola bar recipe that calls for marmalade so I'm looking for Orange Marmalade How to videos. Store bought marmalade is pretty pricey. You are very informative . I do have a couple of questions about your technique though. I've heard that metal shouldn't be used as a debubbler because it can scratch the jars. Have you found that to be a problem? Secondly, why did you top off the water level before all your jars were in the canner. each jar is going to displace some water making the level rise. I just keep a tea kettle of hot water nearby & top off if necessary when I have all the jars in place.

If you do the freezer test and it doesn’t pass, do you just boil the marmalade longer and then test again?
If i made a big batch would i have to add more baking soda? So if i have 12 cups of the oranges would i add 2 teaspoons of baking soda?

Yes, absolutely… this will definitely work for just one type of citrus. The big measuring cup I have is an 8 cup. There’s also a 4 cup. I haven’t found a 6 cup. I found both my measuring cups at local kitchen stores. I’m confident you will, too. And if not, I’m sure you can find them online. Love, Mary.
Mary, could you recommend knives to buy style etc. mainly for chopping...or cutting the orange suprims. There are so many different ones. You are amazing!
PS years ago I read the pith is high in vitamin P ( have no idea if true) but my mother had problem if hands barely knocked would bleed and the P is supposed to remedy that as helps remedy surface spider veins I seem to recall...it worked whatever factor it may have been.

Hi Mary, i made the marmalade following your recipe, I just used oranges, my question is about the color, it didn’t come out orange in color instead it came out very pale orange. Was I suppose to do something else since I used only oranges? Thank you. Florence
Hi Florence, Not sure. It could simply be the type of oranges you used. The thicker skinned oranges generally are more “orange” in color with the thin skinned oranges. But don’t worry. It will be delicious. ❤️🤗❤️
Hi Mary. Thank you for this video. I am new to making marmalade but not new to canning. Can I use your recipe but modify it for oranges only? How would you recommend I do that?
I Love 💙 you and your videos. I’m a newbie and I’m just learning. Before I found you I water bathed pickle beets. Please help me. I washed my jars in warm soapy water then I put them in the oven to keep them hot.
When it was time to fill them I pulled them out from the oven then filled them. I did everything that you told us to do except put the jars in the hot water bath water until it was time to fill them (I put them in the oven). Are my beets safe to eat or not? I definitely know the next time to put the jars in the hot water bath water to sterilize them.
I noticed in a couple of jars some of the sliced beets were above the liquid but all of my lids were sealed. I didn’t realize how important the headspace was…now I know.
Oh boy I think I might rank up there as a “For Sure A Beginner Canner”!
