    Dear Mary, I tried this recipe and it turned out so nicely! I had never made marmalade before. I am a 31 year old woman, and I have been learning to can and preserve over the past year, as part of preparing for starting a family in these uncertain times. I learned so much about how to activate natural pectin from testing this recipe - my marmalade set up beautifully! I have never been able to get a jelly or jam to set well before. Thank you.     It is the beginning of citrus season here in Texas as you well know. I wanted to just can some of the fruit but I saw a video listed on marmalade. So I jumped over here to your channel to see how to do the job well. You are so meticulous and it gives me confidence the time and effort will pay off following your instructions.
    But here's my question: Once you've completed the cooking and it is 'complete and just right,' doesn't the water bath canning cook it more and make it gummy and gooey? Thanks for your patience and help. Jesus bless.

      Hi Sandra, Please forgive the delay. This is an older video so I don’t always see the comments right away. The water bath canning process is relatively short. It’s not like pressure canning. And water bath canning is what is recommended by the National Center for Home Food Preservation to make the marmalade shelf stable so the marmalade should be fine. But you can always just refrigerate it if you are worried. Just follow the recipe. Good luck! Love, Mary❤️🤗❤️

    I love making orange marmalade, and I make mine very much the same as you do.
    A tip is to place your cutting board inside a sheet pan to catch the juice.

    I use a zester that I found at my local grocery store. The zest comes away in very thin narrow strips, perfect for marmalade. Made orange marmalade and it was wonderful!!! I store my rings on stainless standing paper towel holders and have one for regular rings and one for wide mouth . Works great!

    Wonderful video!! So much love (you MUST know Jesus!). We do exactly what you do but squeeze the fruits after removing zest and we use orange juice with pulp instead of water!!

    I don't keep the rings on my canned food so like you I've ended up with a ton of rings I took a whole bag of them to the school for crafts for them I think they're going to use them as frames for little pictures to hang on the tree for their parents I'm not sure but it's certainly a way that was appreciated and I didn't have to try to find a place to put more of the dang things

    Your attention to detail is amazing. For example I never heard the info about the lids not being in the water long. These kind of details can mean the difference between success and failure or so-so success. I have always wanted to make marmalade and feel that I can do it. Thank you Mary.

    You would be the ideal for my pick your switch Grandmother. Your peel of that Rind was so thin and long! I'd have been cheering myself. Winning! Yea You! Great tips and tutorial on this. Grandmother was not gonna spend a cent on anything she could do without expending money on. She was frugal. So frugal when she died she had a ball of shipping twine the size of a basketball. She saved the paper you wrapped a package in also and just turned it inside out to reuse. I'm thankful you are teaching me the frugal way. I still fear that woman and she's been dead 35 years.     Hi Mary. I like how you made the marmalade in the traditional way. Do you think monk fruit sweetener would be a good option here? We have a huge orange tree in our yard that yield a lot of bright vibrant beautiful oranges. The color and the citrusy flavor that you will not find in the grocery store. It is a perfect time to make marmalade.

I will be making a candied orange peel video soon, learned the vinegar from you, ...now making citrus JUN & Citrus water (I need kefir...) and have been wanting to do jams, but wasn't sure if it needed to be pressure canned. My favorite was their Citrus Marmalade. I've tried to duplicate it unsuccessfully, but now I know how to do it right. Thank you!

    I have a granola bar recipe that calls for marmalade so I'm looking for Orange Marmalade How to videos. Store bought marmalade is pretty pricey. You are very informative . I do have a couple of questions about your technique though. I've heard that metal shouldn't be used as a debubbler because it can scratch the jars. Have you found that to be a problem? Secondly, why did you top off the water level before all your jars were in the canner. each jar is going to displace some water making the level rise. I just keep a tea kettle of hot water nearby & top off if necessary when I have all the jars in place.

    Do you have to can it? How long will it last in the fridge? I have no canning equipment right now but I have fruit I don’t want to waste.

    Be sure to read label on box with lids -- making a new/different type of seal now that will disintegrate even if only briefly dipped in boiled hot water -- so if it says on label not to then don't. I found out the hard way.
    As long canning process is 10 minutes or longer (more at altitudes; don't forget to make adjustment) lids and jars get sterilized right along with the food so not necessary to sterilize -- however, do need to preheat jars before adding hot foods to avoid temperature stressing the glass so ready to use when water comes to boil -- but doesn't hurt anything to sterilize if prefer to do so (I do it anyway myself).

    I find soaking the pythed fruit in plain water makes it very easily scraped with a dull knife. Just my best method as I hate boiling it.

    I use the handle of a wooden spoon to drag a trail through the middle and if it doesn’t immediately fill with liquid you’re good to go ❤️

      PS years ago I read the pith is high in vitamin P ( have no idea if true) but my mother had problem if hands barely knocked would bleed and the P is supposed to remedy that as helps remedy surface spider veins I seem to recall...it worked whatever factor it may have been.

    I used a glass pie pan because the fruit juice was making a mess. That worked really well, then I could periodically dump that in the bowl, free of seeds.

    I don’t boil the water in the small boiler containing the lids and bands, but I have never had a problem with putting the lids into the boiler with the bands. One problem is getting two lids stuck together and inadvertently putting to lids on a jar. Now, I keep a mental count of jars, lids and bands. If 8 went in, eight better come out. If I end up short one lid I better find it, because it is probably under a band on one of the jars.

    I put my hot water canner on the stove with the jars in it before I start working on the product. I put the lids and bands in a small boiler with enough water to cover them and turn them on low. I turn the eye on Hi under the hot water canner. I will turn it down when the water comes to a boil. I try to keep the water in the hot water canner about 180-200 degrees, as checked with my infrared heat gun. I keep the canner hot because after the jam or jelly is put in the jars the canner will be used to process them. I lift hot bars out of the canner with my canning tongs. Usually, I throw any utensil I will be using, ladle, spoon, etc. into the hot water canner with the jars to disinfect them. Canning is easy but you have to be deliberate and consistent to produce a good product that will stay good for a long time. I ate strawberry jam that I canned in May 2013 and it was just as good as it was in 2013.

    Can I put jars if jam in the water bath canner some days after making the jam so that they are shelf stable?

      I wouldn't wait to do that til later because the finished product has to be hot to start with. If you choose to not water bath can right away, then think about placing the jars in the freezer for freezer marmalade. Just fill the jars, wait for them to cool, top with lids, place in refrigerator first to come down to temp, then put in the freezer.

    Wonderful video. I will be watching them all. :) I do have a question. What happens if you don't bring them out of the hot water straight up? I pulled my jars out sideways because I have a stove fan just above and could not bring them out straight up. I also did not know to do that.

    Hi Mary. I found this video at the right time! I have a bumper crop of Meyer lemons, oranges and some grapefruits. Two questions. Can I use this recipe for a single citrus flavor and where can I find a 6 cup glass measuring cup. What brand do you use? Thank you!!

      Yes, absolutely… this will definitely work for just one type of citrus. The big measuring cup I have is an 8 cup. There’s also a 4 cup. I haven’t found a 6 cup. I found both my measuring cups at local kitchen stores. I’m confident you will, too. And if not, I’m sure you can find them online. Love, Mary.

    This is a question and info for Mary. As it was first uploaded 3 years ago, I wonder if you, Mary, will ever see this. Well here I go. Have you ever made this with the entire fruit in the food processor? I ask because I got a lot more than 6 cups doing it that way. Maybe 2 cups more. Oh well.
    Thanks I really like your recipies and your style. If I have to modify, no problem as that tends to be my norm!

    In case anyone needs to know, that electric water bath canner she's using and not showing you or telling you what type it is or where to get it, why, I don't know... but it's called A Ball Fresh Tech Electric Water Bath Canner. You can order it online through the Ball Website. Or you can find them on amazon or Ebay. I don't understand the reason behind not letting anybody know what kind of canner that is. Only one company makes it like that.

    Excellent explanations!!! But I will stick to my mom's way of jams, jellies and marmalade. In Germany as well as Russian countries no one waterbath those. My lids are so darn tight, even after after years, that it takes "brute force" to open them, never had a lid come loose!

      Thank you SO much for the kind words. Oh my goodness - yes! - are you talking about just flipping them upside down and letting them seal? That's the way my mom did it. But these days the canning powers that be - LOL!! - have so many more detailed rules that I thought I should share those. Are you in Germany or Russia? My husband loves German food and has ancestral ties to Germany. And I have to share that we have a Russian Restaurant in Austin, TX!! It is my son's favorite and we save it for special occasions!!       @@MarysNest you ARE the sweetest person! I always feel a little uneasy going against the grain with a comment, and I totally understand you want to teach people the "canning nazi" approved way. Humbug, I say 😄
      I am German and grew up there. My mom had the coolest waterbath canner, the lid had a hole in the center to fit a canning thermometer in. On that are the degrees marked as well as the fruit. Some gets canned lower than boiling. I still have the thermometer but not the lid. So you would keep the temp for the specific fruit for a set time. I was looking for how to can just a jar or two not having to break out the big pot and found this Russian lady who still cans "the old way" . It's all in German with the cute accent she has, now I do my small batches the simple way, yes, hot jars upside down, covered up. Veggies, tomato sauce and of course jam. She cooks fantastic stuff, though not extremely what I consider healthy 😉
      When I moved to the USA people still sealed their jams with wax. Never tried that one, gross 😂

I love to learn and love to hear about how others do things - whether it is similar to me or different. And I especially love learning about the old way! My mom is in her mid-90s (!!!) and she chuckles at how today people are so worried about germs! LOL!! Oh my goodness!! Yes, the wax - I remember seeing that.     Hi Mary, What do you do with your jelly while your waiting for the freezer test? If it doesn't pass your test do you cook it longer? How long. Thank you in advance. Just got this canner yesterday. Have a blessed evening.
