Your demo raises a light on skillets and lard. Yes, lard. Oh, you look very healthy to me. NO PROBLEM WITH SOME LARD. Lard, black skillet crackling corn bread and ham hocks with beans. Three of my MOST favorite foods. Cracklin' cornbread is so delicious. Instead of bacon, my grandmother used pork skins or cracklins as they were called. Cracklins are pork skins with just a little fat left on and then fried up. Cracklins are meatier and denser than pork rinds or chicharrones and used to sold in packages at stores that specialized in southern foods. My grandmother made her cracklin cornbread from memory, but it always came out perfect. It was just a tad bit oily but not too oily and never sweet, always savory.
Now that’s my kind of meal sir! Looks delicious…😋…I can tell your momma and grandma raised you right…👍🏽this meal made me smile and you look so cute in your cowboy hat as always…☺️ and the crunch on that chicken was unbelievable and it was funny when you said that plate wasn’t gonna stand a chance when you got off camera…🤣…another great video…👏

I agree about the hocks sold in grocery stores. Back in the day they were meaty, nowadays seems way too fatty. So I’ve switched to smoked neckbones instead. I’m always pleased with the amount of meat even if they require a bit of sorting out the smaller bones. Love a good hock though 😋 Fifteen bean soup with ham hocks was my favorite. Cornbread on the side of course 👍🏾

Wow, I haven't eaten crackin' cornbread since '59 when my grandfather passed. My grandmother stopped baking it, she would make Jiffy instead. My maternal grandmother also baked Jiffy cornbread. Up to a few years, I also made Jiffy cornbread, but it started sticking to the cast iron skillet, non-stick pans, non-stick and muffin pan. I used Jiffy because the buttermilk would spoil before I used it again. Then I read online that kaffir milk was actually the first buttermilk. I found full fat, pasteurized kaffir at the store, and started making cornbread from scratch. The pasteurized kaffir will last 60 days, I always use it up within a month for pancakes and such...Your pitchfork brought back a bloody memory. When my great-grandmother health started to fail, my grandmother moved her up from Missouri..She was a mean, spiteful, head strong woman. I have a Missouri newspaper clipping from 1924 where she slashed at a white man with a 10" knife after he slapped her, that had pushed her off the sidewalk! She wasn't lynched and disappeared..We were all eating breakfast, my great-grandmother said something to my grandfather, he said something back..She got up and stabbed him in the neck with a pitchfork!! She barely missed his jugular! I was 7yrs old, and remember mom grabbing me and brothers and going outside..Of course the police came, my grandmother had stopped the bleeding, and my grandfather didn't press charges. My great-grand went to live with my aunt after that..

Often you say THAT'S WHAT YOU WANT IT and I don't know if this is vital for the dish to or whether it's your preference. Those ham hocks, for instance, I would broil the skin because I prefer it to be crispy but I don't know if thats right. Please help. I love the look of that cornbread. Thanks a lot.
When I mention "that's how you want it," I'm typically referring to a certain cooking technique to achieve a certain result, ie tenderness, crispiness, char, etc and that's mainly what I want to convey in those instances, proper cooking technique. On the other hand, when I mention "make it yours," I'm usually referring to spicing and varying degrees of flavor, which can vary due to one's personal preference. Not Cornbread mix. Just Cornmeal and flour. The mix has flour in it, so it's mixed for you. I don't use the mix. Hope this helps and thank you for sharing and watching.

That's a new one for me, chef. I've never seen anyone add flour to cornbread mix. Like I said, always learning something new on this channel.
Never used bacon, either. Always buy cracklins, which taste nothing like bacon, although it's still pork.
Not Cornbread mix. Just Cornmeal and flour. The mix has flour in it, so it's mixed for you. I don't use the mix. Hope this helps and thank you for sharing and watching.
