What I love about Ken Hom's video is that he doesn't talk down to you, he isn't all flash, he's laid back, he takes his time to explain what he's doing at each stage. I have just ordered a wok and a selection of food items to give his recipes a try.

I love watching this guy cook . I first found Ken , some 20 odd years ago on Sky's QVC shopping channel . I couldn't believe how quick he could put a chinese meal together , in such a short space of time . He gives clear , concise instructions , with as other posters have already mentioned , the reasons behind these choices , and all in a really polite and humble kinda way . Even here he showed how to hold and use a cleaver . A very pleasant guy to watch .

for example, it is the only video I've seen that explains the difference between light and dark soy sauce, how to know if a wok is hot enough, why not to fine chop garlic in a stir fry, what is the logic behind the order of adding ingredients. Other recipes tell you to DO these things but do not tell you WHY

+littlecicero We are so glad that you like the video. We certainly believe that it is important to explain ingredients to people, especially if they are from other cuisines. Are you a big fan of Chinese dishes? :)

    • @lilcicero77

+Tescofoodandwine Thank you for your very kind reply. Before I lived in China, I always thought I had no sense of taste. But the culinary standard there is so extreme, that it was a revelation. Since then I have wanted to learn the basics but the youtube videos for Chinese cuisine are not as good as the ones for other cuisines, in my experience- except for this one, which is awesome :) I look forward to seeing the rest of the tesco ken him videos. Thank you very much for sharing these !!!!

+littlecicero That's very interesting! Yes, it is sadly quite hard to get stuck into cooking authentic recipes without covering a bit of the basics. We are so happy we can help you along on your Chinese culinary discovery, do keep us posted on how you get on :)

for those people like me who can't flip the food over with the flick of a wrist and can't use chopsticks for stirring the veggies/meat/noodles together, use pasta tongs to stir the ingredients together. No,I am not improving the masters techniques, I am just making it easier for us idiots.
