Forego the ham steak and use 1/2 lb shoulder, or keep it and use 1/4 lb. Either way, I'd add it before the rice so it can flavor the oil. What a great easy dish to make when you have all the ingredients. I am so glad that you have mentioned the Basmatti Rice as the kind of rice to be used for this dish, because any other rice make the dish too sticky and soft. And...some sauted onion with some diced garlic and ginger with the meet make a big difference in taste. I have also learned by experience not to add any salt until the very end after adding the soy sauce, if it needs it.

Tip: for the eggs, there’s no need to cut them out of the pan- just scramble them in pan, move it around and spectate them by chopping them to pieces with your spatula or spoon before the egg is fully set :)

To cook Indian Basmati rice, 1) wash and drain a couple of times. 2) Soak in water for 25 min or up to an hour and drain. 3) For each cup of raw rice, add 2 cups of cold water. Add salt, bring to a boil, lower the heat, partially cover with a lid and let simmer for 12 min. The rice will be cooked and ready to serve. No water will be left to drain. 4) Either transfer into a serving dish immediately, or lightly fluff up with a fork to prevent the rice at the bottom from sticking and lumping under the weight of the rice above it.

I cook my rice the day before. I scramble my egg and slice it. I use oeanut oil and sesame oil. I use beef chicken pork and prawns. ( I cook separately) Add in mixed veggies and some red chillies. Make sure the rice is dry for frying. A dash of soy sauce at the end and some spring onion.

It's a real different way to make fried rice ! Looks delicious ! just a couple of things...normally we use rice that has already been cooked before and it's just room-temperature. As for the eggs, part of the flavor is to cook protein or meats first, then take it off, in there you cook the eggs, and just before they get cooked well, throw the rice, so that the egg combines with the rice and adds flavor. Finally, we use sesame oil, a little fresh ginger...and what you call shallots (green onions) too !
In Ecuador (chaulafan) and in Peru (chaufa), they prepare this but they also add chopped pork, chicken and beef, in small pieces, just like the ham ones. If you prefer, they also add some small shrimp. And yes, sesame oil is added too. I love this rice, I can easily say is one of my favorites. 👍

Basamatti Rice is also the key, I for sure, as a cookbook author of eight books use on this Indian rice, and be sure, ( not mentioned wash in cold water, sifting the rice between your fingers at least two or three times until the rice runs clear), I like his, but for sure prefer adding cleaning the rice. I put roasted chopped pork, shrimp and/even roasted cooked chicken. The other key is not just Soy, but Sesame Oil to taste. I was lucky enough to take courses from Grace Zia Chu's from mainland China over four decades ago, (dead now, but a terrific Chinese chef). I remember cooking at a large convention show and many Chinese restaurant owners came, and I made many specialty dishes, I love also, Lebanese, French, German, Italian, Cuban, Mexican and at least six other cultures, but still Chinese is over 5,000 years old and still one of my favorites. Anyway, after I finished and many came to taste test, the Chinese restaurants owners, said, "how come your egg rolls are better than ours", I said I marinate pork tenderloin, (I was also a butcher and meat cutter for (A&P, Safeway and Kroger) working through ten years of college, and the key is put in only the best and you get out the best in any dish. Marinate the pork in soy, honey, minced garlic, 1/2 teaspoon of sesame oil at room temperature for 30 minutes. Remove and stir-fry in wok (peanut oil is best) until done, then add you choice of thinly chopped white or red cabbage or if preferred bean sprouts. The owners said we can not afford to make them with this expensive meat, so I said "taste is in the pudding", so-to-speak. You should be able to buy egg roll raps at most supermarkets. The egg rolls go great with Plumb sauce, Orange sauce, sweet Chili sauce, hot mustard sauce or at last resort good to even with a good stir-fry sauce. This recipe is in my best seller from Dell/Random House, New York from my nationally syndicated TV series seen in the news in the 80's in U.S., Hawaii, Alaska, Canada and the Virgin Islands in mid-day and evening news on network affiliates, "Making Ends Meet Cooking" from Jon McClure, lucky to have done over 3,000 TV & radio shows over a 40+ year period, but now I run from a TV camera. Been there done that and lots of fun, so please never give up trying to create great dishes, as it is one piece of art, you can actually EAT!
Yessss this is exactly the way you have to prepare the Indonesian "nasi goreng" (nasi = rice and "goreng" = fried ) All the Indonesians prepare it this way, except they put fresh vegetables ! The most important ingredient is cold rice - rice already cooked at least a day earlier & chilled. We Asians usually cook fried rice with the the balanced rice from the day or 2 before, not freshly cooked rice.
I've read that something about the cooked rice staying in the fridge overnight makes for much better fried rice. So, it's one of those recipes that if you want it today, you have to start it yesterday. 😁

I add a couple of star anise to the rice cooking water , adds a nice back note. Also a splash of sesame oil to the sunflower oil does the same. I Use the capsicum, pea , carrot frozen veg as well it makes a lot of difference . Cheers mate

Change it up by rotating your protein, leftover chicken, beef, shrimp..... The rest is the same. It tales less work if you have day old rice. This can be gluten free if you use gluten free soy sauce and use sesame for part to all oil and sprinkle sesame seeds dusted on top.

Funny~ I had cooked California-grown brown basmati rice and had refrigerated the leftover. Somehow I thought of beef fried rice because I had roast beef on hand, but my husband thought it was weird. Utterly pointless adding sesame oil at the beginning. It is extremely volatile and heat kills it. It is added at the end as a condiment.
