Our hushpuppies are more oniony/savory compared to the typical sweet round ones that became popular from seafood camps. My great grandfather (Warner Stamey)was credited with being the first to pair hushpuppies and barbecue together. The hushpuppies have onion in the batter so you were correct to taste that there! You have a good pallete, picking up on quite a few of our kinks! We make our tea “stronger” with not as much sugar as some super sweet tea places.

As Lexington style barbecue all originated from the same people and people have made their slight changes or difference in their restaurant over the years. 👍🏻
These BBQ videos are making me so hungry for the local BBQ spot here. They set up their smokers in a small parking lot and usually open in May. Not sure where their southern BBQ originates but their food is delicious! Ribs, chicken, brisket, collards, baked beans, Mac and cheese, corn bread. Yum😋

I worked at bbq restaurant in Lexington, NC, as my first job. The long hushpuppies are hand cut. You shape the hushpuppie mix on a spatula and hand cut with a scrapper one at a time straight into the fryer basket.
We were only doing the Historic bbqv trail locations. Only the ones that smoke on open pits. There are only 13 left. In another visit we will go to some others for sure
I love your reviews. I've been living in NC for 25 years now. I find their barbecue fascinating and delicious! I love that you're doing this. I saw a place that offered maps of the trail on sale but never got one. So this gives me an opportunity what to see what's on it. A side note, I have had both Stameys and Hurseys many times. One thing you did not mention is there's a different slaw. A lot of places use the traditional mayonnaise based (white slaw ) Then Stameys uses the barbecue based (red slaw.) I believe the slaw makes the difference. It's a awesome showing the pits. If you happen to be traveling on certain days the smell fills the air in the area!
Stamey's has huge following, the old building in that same location was cool old school green and white subway tile, like a diner.with about 20 speakerphone stations( like old Sonic). Too bad ur through with the vids, u prolly could of gotten those guys to fry u up some pork rinds, nothing like the bag grocery store ones, and very good!
I've lived in NC almost my entire life and have always been able to enjoy NC BBQ. We live just 10 miles from Hickory (shout out Hickory Crawdads on your hat). Aa for the hush puppies, every restaurant is different but I have had both round and long hush puppies. Love your videos as you are traveling through NC! It's neat seeing it from an "outsider" viewpoint since I've been around it all my life. Have you been able to try the different kinds of slaw? There is BBQ slaw which is a red slaw and there is the more traditional slaw which is mayonnaise based. Enjoy!!

Ate at the one on Battleground and was disappointed - no smoke. Would not eat there again.
Western NC adds ketchup to the vinegar based sauce, eastern NC doesn't.

Mr. Barbeque in Winston Salem is my favorite. It's cooked over a pit and I think it's the best of the best in NC.
