Wattage is volts times amps, so if you have a 3v 2ah battery then it is also a 6Wh battery. So without knowing what voltage the battery is at you cannot calculate mAh.

Can't easily convert to mAh on this device, because mAh is based on what voltage you are running at, while Wh is based on *ACTUAL* power capacity (regardless of what voltage it is being used at)... So mAh is a measure of total capacity at a given voltage (usually where the manufacturers mislabel their products, because the battery is at a nominal voltage of 3v, then being converted to 5v, so they can say a higher mAh number using the 3v rating than if they account for the boost converter or not.
So in fact it is easy to convert - so long as you specify nominal voltages. Say: 3V, 5V, 12V. 400Wh converts @: 3V = 133,333 = 133Ah 3.6V = 111,111 = 111Ah 5V = 80,000mAh = 80Ah 12V = 33,333mAh = 33Ah So this device has about the equivalent capacity as the cheapest smallest car battery you can buy. And a car battery is a good comparison as it has the ability to supply decent current to an AC voltage appliance.

they use wattHrs due to the different output voltage/current it can provide, like for example if you're gonna charge a phone you need only 5 volts and 1to2.1Amp, while if your going to use it to power a TV you'll need 110v or 220v

You cannot convert Wh to mAh directly, since mAh are relative to the voltage used.
With the formula (Wh / V) * 1000 = mAh you can calculate how much mAh you are getting out of this. For example using the 5V outlet (for a phone for example) would give you 80.000 mAh.

What I'd like to know is the discharge rate vs capacity curve. You could find that the same battery can provide a power of 1W for 400 hours, giving 400 W*H of power, but if you draw 50watts, it's dry in 4 hours, giving half the previous capacity.

At 5 volts, it's over 86,000 mAh. If you're not using Ohm's law then you're doing it wrong. The specification is expressed in watt-hours because of the multiple output voltages. At 120 volts a/c, the drain is 3600 mAh, that's a mini fridge running at approximately 60 watts.
most likely 30-40 18650 cells all ran in parallel because on Amazon they have it listed as 120,000 mah and on Anker its listed for 499.99 USD. The GoalZero yeti 400 is a better deal at 376.48 USD.

You cannot convert Wh into mAh without knowing the voltage. since P(watts) = V*I. Makes sense to rate in wh rather than MAh, because Wh is a measure of actual energy, regardless of what voltage. Since there are multiple voltage outputs.
To convert, divide by the voltage, and multiply by 1000, this converts to Ah, then *100 converts to mah.
For example, on the 5V, assuming that the power conversion is 100% efficient (it's probably around 80-90%)
(434/5)*1000 = 86800mAh
on the 12v
(434/12)*1000 = 36166mAh
On the AC (120V RMS)
(434/120)*1000= 3636mAh
That's still mighty impressive, assuming they are not just over rating the cells.
