I would probably use a food processor since I don't have a mortar and pestle. My mother has 3 different Cuisinart food processors and other things as well. Who doesn't have a few kitchen appliances sitting in the dark corner of some cabinet?

why do you use lemon? In our recipe we don't use lemon. It seems that someone used to make this mistake and this false ingredient now it's used in every recipe outside Italy
I just made the pesto with sunflower seeds, a lime, vegetable oil, garlic, basil, kraft parmagian cheese, salt/pepper...its amazing. Don't be scared to substitute, especially if you are willing to have something that is a bit different. If you are looking for an exact flavor, copy recipe to the T.
cashewnuts are about 37 euros here, almonds - 20 euros and peanuts - 2 euros.. peanuts are very cheap.. that's why I am surprised where are they so expensive? Australia?

I would recommend soaking the almonds overnight, they are much easier to work with. Also is the cheese really needed?

I wonder how deep the mortar you're using is? I'm looking to buy one that's 5" around inner bowl and 4.5" height, holds 2+ cups.
How long can you keep it in the fridge for? It's just me so I assume I wont eat it all in one sitting. :)
