  • The giardiniera is a particular pickle prepared with different vegetables, which goes perfectly with the cold cuts in rustic appetizers. Making the vegetable giardiniera at home is easy and affordable for everyone: you will only need carrots, cauliflower, celery, peppers and gherkins (but you can also add other vegetables of your taste), the ingredients for the brine and the inevitable glass jars to keep it.

    INGREDIENTS (for 3-4 half-liter cans)
    - 1 Cauliflower
    - 4 Medium Carrots
    - 4 Gherkins
    - 2 Red Peppers
    - 4 coasts of White Celery
    - 1l of Water
    - 1l of white wine vinegar
    - 2 tablespoons of salt
    - 2 tablespoons of sugar
    - Black pepper in grains
    - Bay leaves

    Se aggiungo le cipolline quanti minuti devono cuocere? Ma il composto della bollitura viene messo caldo nei barattoli? Poi si devono raffreddare per essere bolliti? Grazie

      Salve Marco, non abbiamo usato zucchine. Se intende, invece, i cetrioli li abbiamo impiegati a crudo.

    Ma perché sterilizzarlo dopo? Il barattolo dovrebbe essere sterilizzato prima anche perché è l’interno che deve essere sterile sopratutto… grazie della ricetta

      Esatto, viene bollito alla fine per creare il sottovuoto dei barattoli per conserve e garantire, in questa maniera, che le verdure si conserveranno.
