  • Giardiniera is a colorful Piedmontese recipe, a vegetarian accompaniment dish, easy to reproduce and store. Christian Milone, one Michelin star chef in Pinerolo, illustrates the original version and its gourmet reinterpretation. Without modifying the ingredients, the chef works on the consistency of the vegetables and the preparation times with the use of the sous vide technique.

    E che bravi che siete voi di Italia Squisita! E che bravo lo chef Milone!
    Bravi davvero a proporre la giardiniera, l'ennesima eccellenza gastronomica italiana mortificata dalla grande industria conserviera.
    Barattoli in vetro troppo spesso ammassati in anonimi scaffali della grande distribuzione.
    Ed è un peccato capitale perché quando è fatta come qui ci fate vedere, come Dio comanda, diventa un contorno meraviglioso capace di esaltare le carni o le altre pietanze che accompagna.
    Grazie a Italia Squisita che riscopre le buone cose che il nostro passato gastronomico può ancora farci apprezzare e grazie allo chef Milone per tanta semplicità e maestria.

      Deve essere stata una grande esperienza, anche io ho lavorato in uno stellato e devo dire che è stata una grande, ma grande, figata :)

      @@dominickvaughan3740 Milone è davvero molto simpatico ed umile, molto curioso e all'avanguardia, la sua cucina è molto particolare sembra una navicella spaziale con i led che cambiano colore! Sono esperienze che ti forgiano ma che io non farei tutta la vita, fatto da 1 a 3 stelle ma ho lasciato ormai da un po di tempo

      It's boiled, flavoured and preserved in liquid. A large part of that liquid is vinegar, so yes, it's fermented.

    the channel became too fine-dining centric and chefy. there needs to be more home appropriate recipes for followers to try and get involved with the content.
