    BETH’S CHOCOLATE MARBLE POUND CAKE RECIPE
    Makes 1 Bundt Cake (serves 12)
    INGREDIENTS:
    1 cup (240g) butter, softened
    2 ½ cups (500 g) sugar
    6 eggs, room temperature
    1 tsp (5 ml) vanilla
    2 ¾ cups (330 g) sifted flour
    1 tsp (5ml) salt
    1 tsp (5 ml) baking soda
    1 cup sour cream (240 ml), room temperature
    8 oz (230 g) bitter-sweet chocolate, melted
    FOR GLAZE:
    6 oz (169 g) semi-sweet chocolate
    ½ cup (120 ml) heavy cream
    2 tbsp (30 ml) chopped pecans
    METHOD:
    Preheat oven to 350F(176C) degrees.
    Spray Bundt pan with baking spray.
    Whisk together the flour, salt and baking soda and set aside.
    Cream together butter and sugar until very light and fluffy.About 5-7 mins.
    Add the eggs to the butter mixture, 1 at a time. For a quick way to warm up eggs to room temperature, place them in a bowl with warm water for 5 mins while butter is creaming together).
    Add the eggs 1 at a time, scrapping down the bowl as needed, so that the eggs are well incorporated.
    Then add the flour mixture to the batter in thirds, alternating with a spoonful of the sour cream. just until combined, being careful not to over mix! (or your cake will be tough)
    Separate half of the batter and put it in a separate bowl. To that stir in the melted chocolate until combined.
    Spoon in batter with an ice cream scoop alternating plain and chocolate scoops all the way around the Bundt pan, creating a second layer on top, also alternating flavors.
    Run a knife through the batter balls in a circular fashion, creating a marble design. Be careful not to "over swirl" or you'll mix the batter too much and you won't get good marbling.
    Smooth out the batter on top of the cake once swirling is done.
    Bake for 45-50 mins. It’s done when a toothpick comes out clean. Allow to cool completely. Reverse from mold and place on a sheet pan, fitted with a cooling rack.
    GANACHE:
    Place chocolate and cream in a small sauce pan, heat until combined and smooth. If you feel you need to thin the chocolate a bit in order to drizzle better just add 1 tsp of vegetable oil until consistency is ideal.
    Ladle melted chocolate over cooled cake, top with chopped pecans and allow to set.
    Serve with vanilla ice cream or homemade whipped cream! Enjoy! :)

    QUESTION: I want to try this ... looks awesome! In the DRY ingredients, you say add BAKING SODA. Just wanted confirmation that this is correct. In the video, it looks like a canister of baking powder. The chocolate on top and pecans looks so awesome! It looks like the perfect game day cake!! Go TCU FROGS!

    Looks delicious! Just an idea for a halloween party: maybe adding some orange food coloring to the vanilla batter or pumpkin puree, and topping it with candy corn pieces instead of nuts!

    350 degree oven preheated for longer than necessary. It takes a while to put this cake together. It baked for 45 full minutes in the center of my Wolf oven of 3 years old. It was no where near done and so unexpectedly heavy, it slid right out of my hands when flipping it. BANG. I've flipped 1000's of cakes. I'm an experienced baker and decorator and I have no idea why this cake does not bake in 45 minutes. My lovely ganache sit abandoned and forgotten. I've never seen a pound cake recipe bake in less than an hour. Any idea where I went wrong? So sad :(

      Paulina K. It's the best marble cake ever. Most marble cakes I made before were very dry. These cakes are lovely to have as treats occasionally. I cook all my meals from scratch, heavy on vegetables and fish, no pizza or cheese, processed, frozen, takeaway or fast food as I'm Asian. But I'm no fanatic so I treat myself to sweets once in a while. Everything in moderation.

    looks fantastic! what's the difference between heavy cream and heavy whipping cream? I never see anything at my supermarket that says heavy cream. just wondering:)

It has to do with the fat content in each, heavy cream has more fat in it, making it "heavier" while whipping cream has less fat in it making it slightly lighter and a bit better for whipping.       It's such a great question! I typically use baking powder for cakes, muffins etc and baking soda for quick breads, and some bundt cakes like this. Baking soda works better when there is acidic in the batter, like in this case we have the acidic cocoa powder. It makes it rise quicker. I also use it with cookies, since the baking soda makes them chewier :) . Hope that helps! And what a lovely place you get to live in :) . I'm sure the Caribbean is so beautiful! :)

    Hi sister Beth I try your recepi to make this marble cake but come out wet I didn't know what happend ,I didn't use that kind pan you use but I use round pan and didn't come out good ? As you say 45mint-50mint bake and I do 50mint + because when 50mint done bake still wet in the inside .

    I made this cake in a loaf pan a large one and it takes 1.5 hrs to cook, it also always falls in the middle 😢 I’m not sure what to do

    Hi Beth! I tried this cake two weeks ago and it was a total success! I based on the "method", tonight I tried it again and it was a total mess!! Then I realized that this time I based my method on the "ingredients" list.... So there's a difference! On the "ingredients" list you mention 1tsp of baking soda, then in the "method" you mention "baking powder"... There's the problem!!! :(

    Tested my oven. It's perfectly at 350. There are two possibilities for what when wrong. I baked the cake on a sheet pan (as is my habit). As it was so wet and messy after it flipped out of my hands, I'm wondering if I added to much melted chocolate to the chocolate batter. I'm not used to baking with chocolate bars. The sheet pan really shouldn't make that much difference. Anyhoo ... The cake is fantastic!!! Great results on my second try yesterday. It is moist and delicious, not too sweet, just perfectly lovely! The pecans really top it off! It's gorgeous and delicious!!! Thanks Beth

    Beth, you make some lovely recipes. But, since you have a good knowledge on french food, I have always wanted to see someone make a Croque-monsieur if you know how to do that, or even more french food recipes that would be awesome!

    in germany you just put all the white better then all the chocolate and then you just marble it. easier

      +Entertaining With Beth o Beth your grandmother sure did know what she was doing!!! I tried the cookies and cream!!! It was deciduous!!! added 1 1/2 -2 cups of chopped oreos and it came out great!!! I will be using this recipe for all my pound cake creations.     wht flour should i use for tis receipe.cake flour self raising .all purpose flour or multi purpose flour

      Oh sure all purpose flour is fine. It's what I use in all my recipes :) keeps it easy that way!

    Hi Beth, i'm planning to make 2 batches of this cake tomorrow in loaf pans, how much batter do you recommend to put in each pan? should I put around 3/4 full in each loaf pan?

    Hi Beth. Thank you for your wonderful recipes. I love this marble cake and have baked it many times. Your cakes have always been my familys favorite.

      +Nazmeen Salyani you know I tried it with cocoa powder first and I didn't think it was as good. A bit too dry and not as chocolately. But if you really want to try it that way I'd add 1/2 cup of cocoa powder in your "chocolate" batch. :)
