BETH'S CHOCOLATE WHISKEY CAKE WITH CARAMEL TOFFEE GLAZE
Serves 10-12
INGREDIENTS:
2 oz (56 g) bittersweet chocolate
1 cup (125 g) unsweetened Cocoa
1 cup (240 ml) boiling water
2 cups (400 g) of sugar
1 cup (240 ml) of vegetable oil
3 eggs
2 egg yolks
1 tbsp (15 ml) vanilla
2 tbsp (30 ml) Irish Whiskey
1 ¼ cups (150 g) of flour
1 ½ (7.5 ml) tsp salt
1 tsp (5 ml) baking soda
For the Glaze:
1 cup (200 g) white sugar
1/2 cup (120 ml) heavy cream (room temperature or slightly warmed)
¼ tsp (1.75 ml) salt
¼ cup (30 g) toffee bits
For Scented Whipped Cream:
2 cups (480 ml) whipping cream
2 tbsp (30 ml) powdered sugar (same as icing sugar/confectioners sugar)
1 tbsp (15 ml) Irish whiskey
1 tsp (5 ml) vanilla extract
METHOD:
Preheat oven to 350F (175 C) degrees.
Spray 1 bundt cake pan with cooking spray for baking.
In a large heat safe bowl, add the 2 oz of chocolate. Add the cocoa powder and then the hot boiling water, whisk to combine.
Add the sugar, whisk to combine. Then add the oil, whisk to combine. At this point batter is cool enough to add the eggs without scrambling ☺ Add eggs and whisk until smooth. Add the vanilla and the Irish whiskey. Set aside.
In a smaller bowl sift together the flour, baking soda and salt. Add flour mixture in thirds to the chocolate mixture, stirring gently with a wire whisk in a figure 8 pattern, just until combined.
Pour batter into the bundt pan. Tap on counter to release air bubbles.
Bake for 40 mins, or until a long toothpick or skewer comes out clean.
FOR CARAMEL GLAZE:
Heat sugar in a deep, heavy duty pot. Swirl and stir gently until sugar melted and caramelized. Add room temperature heavy cream, and be careful it will bubble up! Keep stirring and it will settle down into a nice smooth mixture. Turn off flame, add salt and stir until combined.
Turn out bundt cake onto a cooling rack, fitted into a sheet pan (this will help catch the caramel drippings while you glaze the cake)
Ladle over the caramel over the top of the cake in sections, allowing it to form drips on the side. Top with toffee bits!
Allow cake to "set" for 1 hour before transferring to a cake stand.

FOR WHIPPED CREAM:
Combine cream, sugar, whiskey and vanilla in a bowl and whip with an electric mixer until soft peaks form. Serve a dollop on the side of the cake and slide into heaven! ☺

Oh sure! It's actually from a "cleared" music library for production use, but you may be able to purchase it somewhere? It's Annie Drury and the song is called "Some Day". I really like it too, she has such a pretty voice! :)

Beth, there must be something wrong about the recipe in the description box. I'm doing this recipe and i put 56 gr of chocolate in a bowl, added 200gr of unsweetened cocoa and mixed in 240ml of boiling water and it turned out like big crums, not a liquity mixture like yours. Please help!

oooh I made a cake almost like this for my birthday yesterday! but I just used some hot coffee instead of hot water to melt the chocolate and cocoa powder, and some oat flour in replace of some of the white flour. but it looked pretty alike hahahahaha also, Happy Internacional Woman's Day, Beth! yay us! hahaha ;)

LOl! Sure! Ha! So glad you like the videos :) This style is much easier to shoot to since I can shoot the narration, concentrating on sharing all the tips, and then after shoot the demo, and concentrate on that part too making sure I get all the shots :)

Well I made this and it was terrific! The taste of the cake reminds me of the little Debbie fudge rounds but chocolatier......and my only issue with it was caramel topping. I burned first batch. 2nd batch turned into consistency of those sugar daddy's I ate as a child. It was verrrrry hard. I thought i followed directions exact and played video while watching so who knows what went wrong,

It's funny how you mention the vegetable oil, because at school in my cooking class we had an experiment making sandcake. One group made it with bitter, one made it with oil, one made it with coconut oil and one made it with liquid margerine. When we were done, we had to taste all of them and vote for the best and the worst. Butter won and the liquid margerine lost. In this case, the oil was pretty dry, but it didn't get as many dislikes as I had expected.
What a fun experiment! And it really depends on what it is. For example, today I'm shooting Lemon Poppy Seed muffins and those are really better with butter! Because of the flavor the butter brings. In this case the chocolate is so rich and flavorful you never miss the butter and all that remains is the moistness. :)
I made it.It is so tasty. The alcohol I use Grand Marnier instead of whisky.I put the batter into muffin mould and make into 13 muffins. Thanks! It is so moist.

Well it depends, for most cakes that are rich with chocolate flavor yes, but for others that are lighter in flavor like vanilla, or lemon butter is better because you want that flavor the butter brings. :)

***** hmm I think so? I typically use Jameson Irish Whiskey. But if you are not sure about it, you could definitely leave it out :) It will still be really good!!

I know there are cooks who say this, but I find the edges burn too quickly that way so I stir a little, let it sit a little, stir then sit :) This technique always does the trick for me! (However unconventional :)

Aw WELCOME to the channel! You're boyfriend will love this recipe. I would actually add the extra whiskey to the whipped cream and not the cake (say go to 2 tbsp) that way the flavor will be stronger, in the cream and the chocolate flavor will remain. It's a great combo to have a rich cake and a "boozy" whipped cream :) Let me know how it turns out! Enjoy! :)

Awe thank you! So glad you enjoy! You know I'm not really that familiar with baking with Ghee, so it's hard to know for sure. But this cake is pretty forgiving so I bet it would probably be OK. If you do try it let me know your results, because now I'm curious! Ha! :)
