    Today’s recipe is very simple and also special for me. It is ginger sugar. I have very serious Arthritis. My Knee joint and wrist hurts almost every single day. When it is raining or the weather gets cold, it hurts even worse and I had it for over 10 years. I know, I look so young. I got some questions about why I moved to Ecuador. This is one of the reasons because Ecuador is on the equator. It is warm all the time. Anyway, In order to deal with my pain, I created this recipe because ginger is something hot, and I need heat to warm myself up. The ginger is very powerful. If I eat a lot at one time, I will feel that the heat is coming out from the inside of me, which makes feel good. And it is very tasty. It is soft, gooey, kind of like a gummy bear except it is ginger flavor.

    INGREDIENTS
    - 180 grams of ginger
    - 150 grams of glutinous rice flour [Amazon Link: geni.us/CpCAu0r]
    - 150 grams of brown sugar
    - 30 grams of water
    - shredded coconut or sugar powder [Amazon Link: geni.us/bVC37j]
    INSTRUCTION
    - Don’t need to peel the ginger skin because it doesn’t affect the taste.
    - Cut the into slices. Put it in a cup. I didn’t add any water to it so it will be a bit difficult to use a blender. That is why I am going to use a hand blender. You can also use a food processor to blend it.
    - Squeeze the juice out of the ginger by using a cheesecloth. For 180 grams of ginger, we get about a little bit more than a 1/2 cup of 100% pure ginger juice.
    - Pour the ginger juice into the glutinous rice flour and form it into a dough. Cover it and let it sit for 15 minutes.
    - In a saucepot, add 150 grams of brown sugar and 30 grams of water. Stir this on low heat. Once you see it start bubbling a lot. Let it cook for another 40 seconds and then turn off the heat. Let it cool down for just 5 minutes.
    - Pour the melted brown sugar into the glutinous rice dough. It might look like it is impossible to mix it well. Don’t worry. You just use a fork to break the dough into smaller pieces. Then use a whisk to stir it. Within 2 or 3 minutes, it will be completely well combined.
    - Pour the starch mixture through a seive into an 8 inches non-stick cake pan. If your pan is not non-stick, make sure to apply some oil or put parchment paper on the bottom so it will be easier to take out later.
    - Steam it for 40 minutes.
    - This is how I check if it is completely cooked. Put a stick into a check the consistency. If you see the batter that attached to the stick is a little bit transparent, that means you are good to go.
    - Take it out. Cover it and set it in the fridge overnight.
    - This is the next day. Because it is a non-stick pan so it should be easy to take it out. Then cut it into long strips. You can wet the knife with cold water so it doesn’t stick to the knife. Sprinkle some shredded coconut so it won’t be too sticky. Then coat it with the coconut completely. You can also use sugar powder if you have it. Once all the sugar strips are coated well, pile them up and cut it into short pieces. Put this into the shredded coconut. If you see 2 pieces sticking together, just break that apart. Toss everything until they are coated well and you are done.

    I feel you, honey. I am a nurse and have had arthritis for a while too. I just discovered ginger chews in a local supermarket in their ethnic aisle. I wondered why my sister was so insistent that I try them. She is into herbology and loves Asian foods. I can't wait to try this recipe! Especially since it is winter.

    I've made variants of this recipe several times now and it's always tasty! Reminds me a little of making nian gao.
    I'd like to share some tips I discovered while making these delicious snacks:
    One simplification that I think worked well was directly mixing all the ingredients together and not bothering with boiling the sugar. (I tried it both ways and the results seem the same to me). This sugar-boiling step reminds me of nian gao recipes, where you're dealing with slabs of rock sugar, so it's more necessary, I think.
    Another thing that helped with remembering and modifying the recipe was using equal parts sugar, glutinous rice flour, and liquid (e.g. 150 grams of each). This can be helpful if you want to scale the recipe, replace the flavorings, or get less/more ginger juice than expected.
    The recipe says you should get 1/2 cup of ginger juice. 1/2 cup of water is about 118 grams. (I imagine ginger juice isn't much heavier, though I forgot my measurements for that). If you add that to the 30 grams water you dissolve the sugar in, that's almost 150 grams liquid. So you can just remember the 1:1:1 ratio for sugar, glutinous rice flour, and liquid. This ratio also works for other liquids, like coconut milk (though you might want to slightly up the milk to get a chewier/softer texture). I find that the coconut version is even prettier when finished and dusted, the white-on-white giving a snowy wintery look.
    Another note: this snack (and most rice/glutinous-rice-based-foods) gets much less chewy after a few days, and this process speeds up significantly in the fridge. Personally, I usually don't refrigerate (even before cutting it up) before a few days to a week, to preserve the texture (though your risk-tolerance of spoilage may vary). If it does get hard, it's not the end of the world; just pop a few in the microwave for a few seconds before eating (use

    These would be awesome for any pregnant ladies out there who are suffering from moderate to severe nausea. Ginger tea and ginger chews were recommended to me by my ob-gyn during my pregnancy, as I struggled with nausea and vomiting. It really worked for me; I felt the same heat you described. A very tasty type of medicine indeed.

    Hey Mandy! I know exactly how you feel with having arthritis at a younger age. Along with the arthritis, I also have CRPS in both legs/feet. The CRPS causes chronic pain 24/7 - 365 and daily living isn't easy! I love the idea of the ginger warming you from the inside...I can't wait to give this candy a try.     Heya I made these yesterday and they're really yummy! I saw that some people were asking if they could be coated in something other than coconut. I tried coating them in powered sugar at first, but that was a mistake. The sugar pulled moisture out of the candies after about an hour and just made them wet. I re-coated them in tapioca starch on top of the powdered sugar, and that seems to have worked much better. Next time I'll just coat them in tapioca starch from the start!

    I have Osteoarthritis in both knees, I have tried just about every cream, prescription medications out there, and I really like the more natural medicines and definitely well be trying this.. thank you for sharing your story and your recipes.     Instead of coconut, I pan fry some glutinous rice flour for about 15 minutes or until the flour started to smell slightly nutty and look toasted. Medium to low heat, do not burn the flour. And you can use the cooked flour to coat the chews. We used this cooked flour to coat snow skin moon cakes.

    I live in northern Brazil and grow my own ginger. It's an amazing ingredient as well as medicine.
    I'm going to try to make rice flour and give this recipe a go.

      David + In the recipe it is glutinous rice flour, not normal rice flour. You can get it in oriental stores. In the East they use this glutinous rice flour to make desserts.

    Hey Mandy. I am sorry to hear about your arthritis pain. Hope you feel better. I myself was diagnosed with systemic lupus erythematosus (SLE) since the early teens. I try to incorporate turmeric into my diet every day. I didn't even think about "heat" from food like ginger that will also help with pain. I will definitely give this recipe a try. Thank you!

    Hi Mandy. These look great! I'm going to make some for my mom, who loves ginger and coconut. I am sorry to hear about your joint pain. I use golden paste, which is a mixture of turmeric, coconut oil and fresh black pepper. There are a few groups on Facebook if you would like to investigate. It's pretty easy to make and the basic recipe is all over Google as well.
    I also take a supplement I buy from Amazon called Wobenzym. Between that and cutting out wheat, refined sugar and dairy, I very seldom have issues with my back or neck anymore.
    If I do get a headache or something like that, I use essential oils like lavender and peppermint.

    Hey Mandy. I gave up wheat and gluten and took fish oil (6 grams a day) and it helped my arthritis very much! I find when I have something again with wheat or gluten, the pains come back very quickly! Hope this helps 👍

    That ginger candy snack looks nice and must help some who suffer from pain in their limbs. I have been fortunate there, but do suffer from lower back pain which I am taking medications for.

    Thank you for posting this recipe. I know what you mean about arthritis. I too use ginger for it. Once in a while I like a sweet version. I don’t normally eat too much sugar since it causes inflammation that can actually make arthritis worse but on occasion this is a nice treat. 😀

    I noticed comment below about turmeric in which I was going to suggest to you also. But I am thinking of adding it to this recipe additional with the ginger. Do you research on turmeric they also say the addition of black pepper enhances the healing power of turmeric. Healings sent for your arthritis 💟

    Hello! I think you're wonderful, thank you for your incredible recipes!
    I have a quick question: Is it possible to mix the water, sugar and flour together and cook it in a pot and then add the ginger juice to that once it's cooked?
    In other words, would it be possible to skip the steaming step?

    I made this yesterday, it’s just like Mochi! The only problem is the ginger isn’t present enough. It’s like 3/10 ginger strength. How can I get more ginger flavour and heat? I even added a tsp of powdered ginger.
    The next time instead of adding water (30g) to the brown sugar, I will add ginger juice . And also I will add 5 tbsp of ginger powder. I think I would also substitute some of the ginger liquid with turmeric juice. 🥰
    Thanks for the recipe, loved that it was all in grams.

    Hi, you may want to try Persimmon leaves in tea for inflammation. Persimmons fruit help this pain a lot. Maybe add persimmon with your ginger in candies 😉

    I really want to try this but it is so hard to find glutinous rice flour. Is it possible to use white or brown rice flour or should I make my own?

This snack recipe will be good for me since I already eat a piece of ginger root everyday to help keep my blood pressure down since ginger root is a natural blood thinner...       Souped Up Recipes Hey Thai Angel wings are chicken wings stuffed with glass noodles, fungus and other things, when done right they can be really good. But there's a Chinese version that are amazing but they're not stuffed with glass noodles. They're a little smaller and stuffed with finely diced prawns, fatty pork, garlic, minced challots and maybe a couple of other things, they're so juicy they squirt sometimes when you bite into them and are extremely hard to find anywhere. Can you see if you can try a version. They can be amazing. They're not batter dipped they're breaded and fried and go really well with a sweet chilli sauce or even a sweet Vietnamese dipping sauce. A chinese family made them in their restaurant when I was growing up in New Jersey. The Hong Kong Kitchen. Thank You.

      Spoke with my pharmacist yesterday. He assured me that ginger will have no effect on my blood pressure, which is low, or my blood's ability to clot.

      Colette Newton I'm guessing you're living with high blood pressure... I'm not a doctor or an expert, but I been dealing with high blood pressure for a few years now... And if you are dealing with with high BP, I have some great news to share with you and how I'm currently dealing with high blood pressure... I now successfully maintain my blood pressure from a stage 2 hypertension range reading of 160/110 back to a normal range without ever taking any medication... It took me precisely 2 and half months to bring my blood pressure back to normal readings of 120/80 or lower... Never had to visit a doctor and take medication... And that's from eating a natural healthy diet high in Potassium, Magnesium, and Calcium... Mainly from fruits n vegetables... I also used to consume raw grated garlic in coconut water, freshed squeezed lemon juice, honey, tumeric spice n cinnamon everyday for 2 and half months consistently... Also before bed, I used to boil grated ginger in caffiene free green tea with ginseng... But now, I currently just chew n swallow pieces of raw ginger before bed... And take multi-vitamin supplements with Calcium, Magnesium, Zinc, and vitamin D (in a single pill) on an everyday basis... And that's just to ensure I'm getting enough of these minerals... But raw ginger and garlic are two great natural blood thinners (to prevent blood clots) and packed with antioxidants and have anti-inflammatory properties... A healthy diet is the key to success... And of course a low sodium diet as well... Potassium, Magnesium, and Calcium are the 3 main minerals to maintain blood pressure... Just a little research paid off big for my success...☺
