Plantbased Lentils "Shepherd’s" Pie

  • Ingredients:
    5 potatoes
    2 1/2 cups dried lentils
    1/2 onion
    7 cloves garlic( roast 4)
    2 stalks scallion
    1 carrot
    1/2 cups green peas
    1/2 red and green bell peppers
    Small piece scotch bonnet pepper
    4 tbsp vegan butter( use more or less)
    2 tbsp nutritional yeast flakes
    1/2 cup coconut milk
    1/4 tsp celery salt
    1/4 tsp cardamom
    1/2 tsp onion powder
    1/2 tsp garlic powder
    1/4 tsp smoked paprika
    1 tbsp tomato paste
    1/2 tbsp adobo seasoning
    1/4 tsp black pepper/ cayenne pepper
    1 vegetables bouillon cube (optional)
    Salt to taste
    1/4 grape seed oil ( use less of you wish)
    Adequate amount of water to cook lentils and potatoes
    *** You can also add mushrooms or any other vegetables to this recipe and use all purpose seasoning of your choice)
    Bake at 375 degrees Fahrenheit for 45 minutes

    Nice recipe. Another option is to grate the potatoes in cold water and squeeze out some of the starch. You then steam the grated potatoes with cauliflower and mash to make the topping. Delish and healthy.

    I followed most of your recipe but cooked everything except potatoes in the crockpot on low for 5 hours. Thanks for the inspiration. I also mixed in cooked and chopped brussel sprouts with the potatoes for a bit of extra crunch.

    I wonder how this would hold up if using mashed cauliflower instead of potato for a low carb dish🤔. Thank you again for sharing.

    Night, I am not a supprter of the file paper, is there any other way of getting the effect of the Garlic roasted in the file paper. With aluminum tied to brain disease.
