Uncle Birds Southern-Style Spaghetti

I love this recipe because it is so versatile. You can add diced tomatoes and mushrooms etc. Just make it the way I show you first.

    Ingredients

    1LB Ground Chuck or Ground Beef
    1LB Smoked Sausage
    1 Large Bell Pepper
    3-4 Celery Stalks
    1 Large Yellow Onion
    8-10 Cloves of Garlic
    1 LB Barilla No. 5 Spaghetti or any Bronze Die Spaghetti
    2 Cans Hunts Four Chees Spaghetti Sauce
    ½ Cup Dark Brown Sugar
    2 Tablespoons Basil
    2 Tablespoons Italian Seasoning
    1 Cup Parmesan Cheese
    2 Tablespoons Lawry's Season Salt

    1. Wash off your celery and bell peppers.
    2. Rough cut your celery stalks by slicing them long ways first, then cut up your large bell pepper, then your onions and garlic. Don’t worry if you don’t have fresh. Just use garlic powder or the minced garlic in the jar. Set these aside for later.
    3. Cut up your 1LB Smoked of Smoked Sausage. Cut the smoked sausage into small pieces. That way, you get a bit of the smoked sausage in each bite. Set aside for later.
    4. Turn your stove on to medium. Brown 1LB Ground Chuck using a bean masher to break the beef into small pieces. DO NOT leave the beef in big chunks.
    5. Add two tablespoons each of Basil and Italian Seasoning. This allows the Basil and Italian Seasoning flavors to release into the fat.
    6. Add 1 tbsp of Lawry’s Season Salt. Mix everything well.
    7. Add the chopped smoked sausage to the ground beef. Mix it all up really well and lower the temperature to medium-low.
    8. Add your veggies to the ground beef and smoked sausage, mix everything up well, cover, and cook the vegetables until they are soft. FYI the celery takes the longest to get soft. Once they are soft, move to the next step.
    9. Add 1 Cup of Kraft grated parmesan cheese and mix well using a silicone spatula until the parmesan cheese has melted. Here’s the deal if you do not use a silicone spatula, the parmesan cheese will stick to whatever you are using, like a 1-minute epoxy.
    10. Now that the meat and vegetables are seasoned, add the two big cans of Hunt’s Four Cheese Sauce. Mix everything well, making sure to scrape the bottom of the pot to mix the sauce and meat evenly. If you don’t have Hunts, just use the store-brand Four Cheese sauce. Don’t buy the Ragu, Prego, or other premium brands because they already have a bunch of sugar in them, and we want to put our own sugar in there for this recipe.
    11. Add ½ Cup of Domino Dark Brown Sugar. If you don’t have Domino brand in your area, just make sure you use Dark Brown Sugar. Not light brown sugar, not white sugar, but say it with me dark brown sugar. Not only does the brown sugar provide more depth of flavor, but the dark brown sugar also reduces the acidity of the tomatoes, so you don’t get that battery acid heartburn.
    12. Turn the heat down to low so we can keep the sauce hot without burning it. Continue to stir the sauce frequently until the spaghetti is cooked and is ready to add to the sauce so it doesn’t stick to the bottom of the pot.
    13. To cook your spaghetti, fill your pot with water and add a tablespoon of salt. Once the water comes to a rolling boil, break the Spaghetti up into three pieces and add to the boiling water. Breaking up the Spaghetti makes it easier to cover your noodles with the meat sauce evenly. Cook your noodles until they are Al Dente which is about 10-11 minutes for the Barilla No. 5 Spaghetti. Look on your package for exact cooking times if using a different brand. Drain the water from the spaghetti. BUT DO NOT, under any circumstances, rinse the spaghetti. The starch on the spaghetti’s surface helps the sauce stick to it. Add your drained spaghetti and the remaining water to the sauce. Adding the starchy water helps make the sauce even smoother.
    14. Turn down the heat to the warming setting or the lowest your stove can be set to, and let the sauce rest for about 15 minutes. When you come back, the spaghetti will have swelled up some more. Mix it all up again from the bottom before serving, and enjoy!
