    YOU'RE MAKING ME HUNGRY!!!!! Spaghetti is my #1 favorite meal of ALL time!!! When I was a kid (I'm 76, now), my mother used to make spaghetti every Monday while we were in school and we'd come home with the house smelling SO GOOD!!! I have 3 sisters and a brother and, knowing Mondays was spaghetti night--whoever woke up first on Monday morning could be heard hollering "FIRST!!!" That woke up the others and you could hear "SECOND," then "THIRD," etc. That meant whoever said first would get the first helping of spaghetti for supper that night! Our Mom made spaghetti (or sketti, as we called it) from scratch and your recipe reminds me so much of hers. She has been gone, now, for 32 years, but at just the thought of her "sketti," I can smell it and my mouth starts watering! I've GOT to try your recipe! Thanks for sharing!!!

    The sauce on top of the spaghetti is the best method if you don't eat the whole thing at one meal. You keep cooking some more spaghetti, you reheat the sauce, that's how you do it.

    • @kdbrown777
      @kdbrown777 2 ปีที่แล้ว +2

      This is the correct answer.

    • @Dunkelelf3
      @Dunkelelf3 2 ปีที่แล้ว

      @@kdbrown777 it's not. the italian way is not to mix the entire pot of pasta and sauce. you slightly undercook the pasta. if the package says 9-11 minutes for example you will do 7-8 minutes. then you do the mantecatura of the pasta. you take a seperate pan and add some sauce and pasta water in it. then the pasta. you cook it again for about 1-2 minutes together with the sauce and pasta water. pasta water contains starch and is essential in about every pasta dish in the italian cuisine. it doesn't only help to bind the pasta and sauce together so you get a nice even coating but is essential for dishes like carbonara or cacio e pepe to emulsify the sauce and make it creamy.
      try it. you will never want anything else again. do a side by side test. if you don't add pasta water you just can't mix them together properly.

    Your commentary is hilarious and I agree, mixed in noodles is the BEST way to eat spaghetti. This is a delicious dish and my favorite sauce ever. Something about the flavor of all those tomato varieties with the green peppers (green only for me) onions and garlic is just magic. Great recipe and awesome video!

    I have the same problem in my house, my hubby likes the sauce on top and I like my sauce mixed with the noodles. So we put it on top for the first meal and the remainder of the sauce gets mixed into the second batch of noodles the next day. We always have leftovers the next day when we make our spaghetti!

    I'm with your wife on this one...💚 Sauce on top because: 1. I'm able to control my sauce to noodle ratio per bite (I love a lot of sauce) but 2. I like the snap to remain in my noodles for as long as possible... mixing the noodles in the sauce almost always guarantees your noodles will overcook since the sauce is hot and that's all it's doing - still cooking your spaghetti noodles.

    • @Dunkelelf3
      @Dunkelelf3 2 ปีที่แล้ว +20

      that's why italians undercook the pasta a little. say your package says 9-11 minutes to cook them you will just do 7-8 and then they take a little pasta water and sauce and cook them again with the sauce for a little in a pan or something. this way you get perfectly mixed pasta at the right consistency and also does the starch in the pasta water help to cover the pasta with the sauce. pasta water is essential for many pasta dishes like cacio e pepe or carbonara. they call it mantecatura. the starch doesn't only bind the sauce and pasta together but also helps emulsify the sauce in some cases. you get a creamy texture and a nice coating of the pasta with the sauce. try it that way ;) you will never want sauce on top again.

      @@MrMakeItHappen I come from a very large family of 12 children, so the spaghetti🍝and sauce was always mixed together. Only when I became an adult eating at an Italian Restaurant, I experienced the sauce on top of my pasta. Separating the sauce and pasta to me is more indulgent, wasteful and not as tasty because the sauce has time to saturate and flavors the pasta better 🤔❣️

    I make my Spaghetti sauce from scratch. I use the trinity onions, green bell peppers and celery. No tomatoes or tomatoe sauce but tomato paste.

      I grew up eating spaghetti sauce from my adopted Italian grandma. Definitely never had bell peppers in it, and every sauce I've ever eaten has used tomatoes! How do you make a sauce without tomatoes?

    Oh you gave me a heart attack when you showed the jar. Lol I've made sauce every week for 55+ years. You knew about sugar well done. I jar mine in the freezer and make a big pan of lasagna and freeze what's left after supper. Thank you for another great video. Stay safe. 🍝

    I like to mix my noodles with my sauce after noodles are finish. It makes for great couple days after leftovers. Sauce really absorbs into the noodles, and makes it so yummy with some tasty garlic cheese bread to scoop with.

    One thing I add, right at the end, is some pan-fried mushrooms that I toss in a separate pan, along with onions and garlic. I just spoon a few over the top of the spaghetti. Warm garlic bread and a nice red wine tops off the meal.

    I Love this Man. He is truly a Comdien Cook. I Love the recipes but the commentary adds that every little kick. I've cooked so many of his recipes and AB. My husband asked what has gotten into me. He is truly loving it along with my son who is a notorious picky eater.
