Cajun Bandit Stack Conversion Kit on Weber Kettle/Beef Short Ribs with Chiavetta's BBQ Marinade

- I finally got my hands on Chiavetta's BBQ Marinade.....This stuff will be my new go to for a Binder and Marinade!
With the Cajun Bandit Stack Kit and My Heavy Metal Kettle, I set it up like a PBC Style of cook. But first I get smoke on, going indirect.Then I go true PBC Style with direct Open Pit Style.
With the Stoker fan and the addition of My Modded Smokestack the temps are consistent with minimal fuel consumption.

WHOAAAA NELLIE !! Man you were thumpin on all 8 in this cook. You had those creative juices flowin in the pit setup. The beef ribs looked like candy with the red ring. You really surprised us with Janet's Tomato, Zucchini, Potato casserole. I yelled at Janet to come in here, that she was getting a shout out. LOL Great cook Ken, and thanks for the shout. I've been wanting to make Janet's casserole after I watched her video......It Looked so good! It sounded like it would go well with these ribs......and it did!
We'll be making this from now on and I'm sure it will be in more videos in the future. I think you would like this Chiavetta's sauce.........mostly vinegar!
I need to try it on more stuff. It's almost a 3 1/2 hour drive to the store I got this from.......we'll be going back soon. :-)

Hey Chris! This is my kind of sauce........mostly vinegar and no sugars. It's a 3 1/2 hour drive to the little market we found it at. They also have a lot of specialty meats there. I saw Chiavetta's makes an Italian dressing.......is it worth trying?

Yeah, it's very vinegery! Haven't tried the Italian dressing... but I have tried Salamida Marinade, State Fair Spiedie Sauce which is like an Italian dressing also with no sugars but has msg... also from upstate NY. Send me your info and I'll get some out to you... \m/

Is it good? Hell........ the damn bone fell off on the cutting board!! You have so many techniques Ken but the one that I got is the drippings in the coals PBC style!!! Now you're talkin my language and I like it! Then you break out the Brady Bunch Knife and one of Janet's sides! Dude...not only Mrs. HMB approved but one of the best YT videos that I have seen! Big ole like on this one my friend!

Love the stack mod. Been thinking about it since your last video, on a uds the exhaust is a 2in hole so I'm wondering if ya increase what would happen? Great video shorties look awesome
With a 2"...... the draw would be enough, so no need for a stoker to push the air. Stay Tuned.........there are more Mods planned! Smoke On!
I can see how the curvature of the lid prevents from just using a larger diameter stack. But what if you had more than one stack? Like 2 or 3 one-inch stacks to increase the amount of airflow through the kettle without a stoker unit?
Yes......great suggestion.....and I've thought of that. But for this set up and the one using just the Kettle....I have no problem with using a stoker unit.
But........I will tell you..... I have something planned that will be to your liking! I would say be patient and stay tuned! Metal On!
