  • This video shows a simple modification I got from Joe over at Joe's BBQ House TH-cam Channel. He has 8 levels of grates on a modified kettle/wsm hybrid style cooker. This cook only shows the method and setup just on the top level.

      Hello Zachary, From the very first video I stumbled across showing your dad working so smoothly with the big red pit with Rotating grates, I knew this is a guy that knows what he is doing. You should be proud of your dad. He is a great guy and terrific pitmaster. If you are interested and watch close, he can teach you a lot about grilling and smoking.       Hahaha. Me either Louis. I picked this up from Joe. I've been thinkin about double grating for couple yrs sice I saw it on a kamado smoker. When I began using the warming grates I just forgot it. Joe has brought it back to the fromt with this easy mod to double up grate levels. He is fun to watch. Thanks-phil

    Very cool. I saw Joes video also and sat gaping.
    Didnt think i could apply it to mine, but of course i can :)
    I could use this mod both on the UDS and on the kettle. Very clever indeed :)

    Phil, that is genius!!! I subbed to Joe and made sure to leave a comment that you sent me. I may have to add some of those bolts to my 27 inch grate and my top grate of my wsm so I can add another rack from my old 22 inch kettle when I need more room. Anywho, love the mod!! I'm very excited to try this!

      Hello there Rusty. haven't heard from you in a while. Glad you stopped by. Yea I saw the stacker type grates on some of the kamado type smokers couple yrs ago and wanted something like that on my wsm. I don't know why I could not come up with this on my own. lol Good ole Joe comes and shows how simple it is. lol I think it is a great simple addon. I"ve purchased other grates before e.g. the weber goumet series so I had extra. All I needed were the stainless steel bolts nuts washers. Go for it.

      Good for you Anthony. You will have that thing filled up. Update on the hardware. Since this video, I shortened the stainless steel 5/16 X 5 inch Carraige head bolts and cut them down to 3 inch. Also in place of using wing nuts, I went back and got flange nuts. The setup I showed in the video works, but what I changed to is better. Good luck.

      One more tip. Instead of fastening the bolts sticking up on the bottom grate, mount them to the top grate with the bolt protruding down and flange nuts down at bottom. This way works easy. Don't have to try as hard to line up the bolts to the other grate. Just set it down somewhere close. The flange nut will just drop in between two grate rods. Watch my New Year's video and skip ti settimg up the grill. I used the updated version there.

      I posted in my Facebook group Joe's BBQ House a test run of the 8 rack system with 78 whole wings and 28 stuffed bacon wrapped asparagus. I have a few more tweaks till I run another test.

I was attempting to shove your channel in front of more eyes before that Ultimate Weber Smokey Bandit Kettle unveiling. LOL From the looks of the sub increase in past 24 hours, I'd say it's working.

    That's exactly what I need. I use my 22" kettle for cold smoking salt, spices and salmon, but I always end up wishing I had more space! This fits my needs exactly!

    Phil, enjoy your content. You may have answered this but I didn't want to read through 120 comments. Just got a cajun bandit rotisserie and ring. I noticed that you blocked off the extra mounting holes on your ring. I want to do that too for temp control and use of stacked grates. I didn't see an explanation on how you did it.
    Thought I would ask before I start experimenting on my own. Thx.

      Hey Richard. The first time I used some stickon sheet magnets from Home Depot. Since magnets won't stick to stainless steel, I had to get the kind which just peel and stick, and magnetic on the outside for other purposes. Since then I had to unstick them to use the rotisserie. The next time, I just took half of a paper towel wod it up and cram it in the hole, It's up high enough so it won't catch fire and burn up. Good luck with it.

    I suggest since you did all those mods to add a second damper it will make your cooking heat more even.

    I don't own a WSM, so I'm curious what is the diameter of the the cooking rack that you are using for the second tier. I wanna add this to my 22" kettle. Thanks. Awesome idea for those of us who smoke on our kettles!! Peace!

      It's best to use a 21.5 on the bottom, and a 20.5 for the top grate. Put the SS 3 inch SS bolts, flat washers and flange nuts on top 20.5 grate for the stack grate. That one is 20.5. Since this video, I made some changes changing the bolt length to 3 inches, and use the flange nuts instead of wing nuts. Also put the stainless steel carraige bolts on the smaller grate with the bolt going down with the flange nut an inch off the bottom. This setup makes for an easier operation.     Hey Brother! I want to Thank You for what You did with this video. You showed that there are channels out there who dare to do something a little different. Trying something.....experimenting.....and taking a few risks, with results that don't always work as planned. But....for those who care to take notice......they just might learn something.
    The grate stack is a Great idea! Joe got a clever idea there and I could see a lot of people using it in the future. I'm banking money that Joe will be making some serious noise among the BBQ channels. I could tell You learned a lot about that set up you used..........You know what to do next time.     Love this idea gonna try it for myself.... with the lemon pepper chicken you might try an injection method. I guess any good fruit juice would work with the pepper mixed in or even your own spice rub mixed with the juice then injected into the meat. just sayin

      That is a nice stainless steel knife from Academy Sports Store sells for $19.95. It is a good cutting knife. I hit it on my sharpening rod each time out and it will do the job for sure. Thanks for watching and supporting our little channel.

What was the issue with the bird ? flavor ? Cause they looked mighty mighty tasty and tender on cam. Oh and Janet, thanks for the reminder.. I haven't had butter beans in years..!       Hey bud. Many of my viewers love your grate stackin method. Noticed your sub count has increased by 45 in 12 hours. They are responding and that is terrific. You deserve it. The chicken was fine. I just didn't maintain the temperature as long as I needed, and the skin didn't brown up like I wanted. Those butter beans are delicious. We season with 2 or 3 strips of fatbak S & P.

    Next thing you know you will be doin brisket burgers. You need lowering kit for kettle. Or incorporate kettle ash catcher on wsm. Nice looking chicken.

    I see you put a silicone probe port on the kettle. Have you ever had any problems with it when you cook with high heat.

      No problems. Weber puts that same silicone port on the Weber Smokey Mountain. It can take the heat. Have had many cooks using it.

      Have you used the Weber charcoal baskets since put the probe port in.

    Phil 2 questions. I have a 22" weber kettle that I want to do this mod. Will the top lid of a Weber WSM fit a Weber Kettle? What is the diameter of the top rack, or I'd it just the bottom grill gate used on top?

      Hello Darrell. The WSM and Weber Kettle are both 22.5 inches, but the way Weber designed the top edge of each one is different. The kettle is a curled over smooth top and the lid has the overseating flange, and the Smokey Mountain has the flanged mid section which receives the lid with a straight lid edge. In other words they are just the opposite and like two magnets you are trying to put together each ones positive side. So, no one lid will not seat into the other grill/smoker. I tried that early on. Using the stack rack, we are using the 21.5" (normally top grate for either cooker) to be the bottom section, then the bottom grate ( I think is 20 3/4 ") to stack on top. This is good so the lid will have plenty of room to come down without hitting anything especially food like large cuts of meat hanging off the edge.

    Hey IFs,
    I got a kick out of Toby standing in the window checkin out Mom inside while you were making the vid
    Try throwing some applewood chunks in that coal bed for that Chicken Phil, and I know u said you would have preferred it at a higher temp
    I do like the Pif rig of using the wing nuts instead of a regular nut for the adjustments
    I did not see any dessert with that nice looking meal Phil, ICE CREAM PERHAPS? J
