I just brought home a bag of filberts and was looking up recipes to make homemade Nutella. This is perfect timing!
Also, that discoloration in the chocolate is just the cocoa butter that was added to the chocolate melted and separated within the chocolate. It isn't spoiled or anything and will never affect the taste of the product. I used to work in a chocolate factory 😊😁

As a matter of fact, Nutella recipes vary slightly from country to country, in order to meet the local taste (source: a Ferrero employee who was in charge of sourcing hazelnuts for Nutella). Also, the bite sized chocolates you tried at the beginning are called "gianduiotti" (pl). Gianduia refers either to crema Gianduia (the spread) or the kind of chocolate, as in dark, milk, white, Gianduia. Loved the video!

    • @Usagichanda

Some of the Italian chocolate spreads with the most hazelnut percentage are Baratti & Milano with 51% hazelnuts and Crema Novi, which is very popular at 45%. The Caffarel you are tasting here comes pretty close at 40% but it looks a bit harder than Crema Novi.

I however do like to eat sweets n goodies. Recipe: 3 tbls peanut butter powder, 2 tbls cocoa powder, sugar free vanilla creamer. Use just enough creamer to get the consistency you like . I know this is not Nutella but if you want that taste here is a knockoff. Best part peanut butter has protein n cocoa has antioxidants.

Or even - don't laugh! - cotton candy extract replacing ONE of the vanilla extract boops. It'll lighten up some of the "heaviness" the straight chocolate can afford and provide some whimsy and "what IS that?" Without arguing into gross. Of course, there are always the fruit extracts, too, think raspberry, blueberry, orange, strawberry and lime, and maybe something a little more exotic like cinnamon, caramel or mint

    Excellent video as usual :)
Have you tried TBH spread? It's vegan, more hazelnuts, less sugar, and no palm oil :)

Do you have to use powdered sugar? I imagine regular sugar is too grainy.

I tried making it in my Cuisinart. I couldn't get the hazelnuts past the thick paste stage. My machine was getting hot and I had to stop several times to let it cool down. Eventually, I slowly added in the oil first and blended it more. Still not thin and runny. I gave up and started adding the other ingredients and it was too thick. Then I tried adding some milk and now the emulsion is broken. I can't get it to a smooth texture. I'm so disappointed. Help!

HI Emmy, you should try: Novi Crema Spalmabile Alle Nocciole (Vasetto da 200g) by Novi & Parmalat, it's cheaper than Caffarel and almost equally good. Greetings from Florence, Italy
