I'm an Aussie, cook lamb all the time. I only ever put freshly cracked salt and pepper on both sides and leave it until it gets to room temp. When it's at room temp, I cook it over a medium low heat of charcoal. Takes about 10-20 minutes, but always comes out medium rare inside with the fat crispy on the outside.

Love learning about logging and the business. We don't see too much of the son the logger in the family. I know it's extremely dangerous logging let alone by your self. I'd be interested in how log sites are chosen, harvested and how forest lands are managed to not over cut. How undergrowth is taken care of since I live in California where the undergrowth is not taken care of by the state which produces massive forest fires ever few years.
undergrowth in the east coast is shaded out by the hardwoods. nobody takes care of it, nature does. Log sites are chosen by the landowner whenever they decide to have it cut. They sell it to the highest bidder.
