4 Levels of Lamb Chops: Amateur to Food Scientist | Epicurious

  • We challenged chefs of three different skill levels - amateur Emily, home cook Daniel, and professional chef Frank Proto from The Institute of Culinary Education - to make us their best lamb chops. Once each level of chef had presented their creation, we asked expert food scientist Rose to explain the choices they made along the way - both good and bad. Which of these lamb chops would you serve to your esteemed guests?
Check out Frank's level 3 recipe on the ICE blog: www.ice.edu/blog/frank-proto-...

You’ve got to try it!! My dad said he never liked lamb (but because he had never tried it). He also likes all his meat well done because again, he’s never tried it medium-medium rare.
I made lamb chops once for a party with a red wine, rosemary, garlic marinade and I grilled them to medium rare-medium, and I caught my dad with like 6 of them eating them and sucking on the bone 🤣😂🤣

As an Australian who loves their roast lamb fairly well done (if it simply falls off the bone it's perfect), I would say Emily's version is a rather nice and simple way to cook a meal of lamb for a family of 4-8 people that could be enhanced by the jabbing of the meat to allow the marinade to soak in better and marinade for longer, for a nice twice a week dinner (or at least for a Sunday Roast lunch or dinner).

Next, we’re going to put it on Noah’s Ark, and what this is going to do is put some nice moisture into the air around it which will help tenderize the meat for when we eventually butcher it in several centuries. Next…
