This is a very well made tutorial, nice and clean. I'm using blender actively for more than 1 and a half year now but I didn't know that curve modifier distortion won't show up on UV projection. That is useful to know. The hdri light probe as reflection was completely new to me, I always used generated cloud texture for that :D Also that photoshop stitching texture, nice job. I will try to replicate that both in gimp and photoshop.
Excellent tutorial Ray, I look forward to watching more. My only comment would be that I would have rather had you do this in cycles vs BI. But you do a great job and it seems like your tutorials are well thought out and it shows in the quality of the tutorial.
I don't think any modifier will effect the uv unwrapping unless that modifier is applied to the mesh. Otherwise you are just editing the original un-modified/deformed mesh.

If I unwrap normally the deform modifiers sometimes distorted the uv-s so I always apply them before UV unwrapping. The thing that surprised me here is that the project from view doesn't take the modifiers into account. I thought that it just takes a "screenshot" of the mesh from the actual view.

Depends what you mean by self-taught :) I've watched a lot of tutorials and did a university course in Maya (after learning blender).

Can do a knitting animation "How to Knit"? with this steps to knitting for beginners ... I think this will be a great issue.
