Yesterday I saw ur sweet seedai, but even after using ghee it got separated. Even my mother tried in her place same problem. Is there any other reason other than butter for this problem?

The flour shd be roasted well
The jaggery paagu consistency also plays a vital role- it shd not be too thick or too watery-
The mixed dough shd cool down
U can prepare the dough previous day , allow it to set for 10 to 12 hours and try Vella Sendai the next day also
