Also good to notice he can't be captured because he knows about Palpatine and many thighs like death star etc. so even if the Republic would capture him, then on the trial the judge (allied with Palpatine or his friend) couldn't convict him at trial and had to acquit him or else Grievous could have released Sidious's identity in exchange for his freedom. Yeah, many uderestimates his meaning and huge role in this conflict.
General Grievous wasn't meant to kill Jedi and lead the droid army... He was meant to test all the escape pods, he just got the following roles as a bonus

Grievous is a great antagonist. He's ferocious, but also cunning and tactically proficient. He won't let his bloodlust prevent him from retreating so as to conserve his forces and himself when that's what the circumstances call for. That's far more intimidating than a mindless beast

Honestly Padme had a ton of moments where she actively was turning the tide of the war. She personally captured Gunray at one point, she stole the plans for the rebuilt droid factories on Geonosis from her awful ex, she captured Grevious (well the gungan army did really, but she gave the order.) She was really committed to making the war end as soon as possible lol
I love how he is supposed to be a strong combatant but is a true master at running away. Did you see how he eneter the fighter? Same everytime like clock work for him lol.
