I have been meaning to make this pan dulce for weeks. Made it today....of course, first time takes longer, but this was really easy. They were SO fluffy and orange when I finished. So Delicious! Love the Claudia recipes

Claudia if you want to make your life easier, get some dishers. They are are old school "ice cream scoops" but they are actually designed for exact portioning of battery for cookies of cup cakes.
I tend to make a mess as well so I use a soup ladle to pour the batter into the muffin cups now I just have to figure how much sugar substitute to use .
