You have to really get to know your dough before it will speak to you. That’s why I’m a cook not a baker. But I’m still gonna watch and learn what I can.
Being Mexican and a long time Claire fan, this series has just sent my love for Claire and her team over the moon. I love the deep dive to mexican cuisine in all it´s forms. I love that you can tell that the curiosity towards all chefs and their food comes from a very geninue and wholehearted openness to learn, contribute and share with everyone else. Loving this series!!
After watching Claire cooking in the most meticulous mathematically precise way for years, and making brioche specifically, it's fun watching her interact with someone with such a different approach in the most respectful way of their process as a student instead of imposing her ways (which tends to be the way some type A personalities usually are). This was an amazing episode in that sensei!
It's so amazing that we could feel that Mariela has a personal relationship with every Conchas she makes. Truly wholehearted pastry making. And I love how Claire is so respectful, I bet as a fellow pastry chef she sees that even more than I can, and it's so pleasant to see.
Well, yeah, I mean, she’s seeking out people who are really specialists. And I’ve heard her say many times she considers herself a home cook, even though she’s professionally trained and an author Nd all.
We have something called "墨西哥包" (literally "Mexican buns") here in Hong Kong, and it's a local man who brought the recipe back from Mexico after doing business there. They're a bit different from conchas: the topping is looser, piped onto the dough, and we don't do the stamp, either. In fact we have another baked good called "菠蘿包" (literally "pineapple buns") that have a crunchy cookie topping. It's bumpy and gnarly like pineapples, and looks more like conchas than Mexican buns do.
Bolo bread (and Japanese Melonpan) are both very similar in concept to conchas, from what I can tell. I love it when different cultures come to the same, independent conclusion that something is delicious!
Me too! But also breakfast taco guy. Seriously, Claire has chosen some great people. Only complaint? Put the address/url of the places you visit in the description.
This is amazing because for years now I’ve been using Claire’s brioche recipe to make conchas and they turn out amazing. Letting the dough rest overnight gives it so much more flavor and makes it easier to work with ❤
Publishers watching, give Mariela a cookbook deal! I come back to this episode all the time for concha advice. I'm rewatching on a victory round today after making my own conchas with chocolate chucks. They came out heavenly.👼
You can tell how much love and emotion Marielle puts into her baking, such a sweet moment to watch her craft be appreciated by Claire. Tearing up watching this 🥹
Comadre is, more or less, the best bakery in Austin and the best conchas I've had. Menu is different every week, but you honestly can't go wrong with anything they produce.
something about this video just radiates pure happiness. i love claire and her respect for what she learns, cooks, and eats. mariela and claire had such a lovely vibe and seeing mariela's reaction to claire liking her concha was so sweet and relatable--the nervousness made me smile and was just pure. forever the favorite part of my week, thank you for the uploads claire!
@@Polypores44 at 24:00 it’s subtle but I felt like she was building up to hopefully eat a fresh one and then all hope was lost when Mariela said in 20mins
I love the description of the dough as "happy" As someone who assigns emotions and reactions to inanimate objects consistently for funsies, that made me smile🥰
At first I saw the thumbnail and was like, hm the lady with the fringe looks familiar and then I realized it’s the woman who runs Comadre Panaderia in Austin! I was able to try some of her baked goods, and I really enjoyed the conchas. She seems like an awesome business owner!
watching Claire get all gitty and excited about expanding her knowledge on baked goods - in a different culture - AS A well known pastry chef is EVERYTHINGGGG and more 🤍🫶🏼
I absolutely love that even though Claire is so skilled and knowledgeable, she is also humble and open enough to know that she can learn a lot from other people. Respect! Also, I live in Texas, so now I'm so looking forward to checking out Comadre Panaderia sometime! Yumm!!!
Seeing Claire use the tortilla press was so gratifying. Seeing a chef I look up to use a tool I grew up with and is close to my culture just felt like my worlds colliding
this is def getting bookmarked to try later, esp the browned butter lavender ones. Claire has gotten me hooked on browned butter, I use it in all my baking these days
in the 90s they gave these in school for lunch time it was LA. for years i thought about them wondering what they were called , i dont live in the US so i hope i get the chance to eat these again. this was a pleasant episode
Yes! There were a few random LAUSD cafeteria foods that were so good! The kinda shitty chalupas, rectangle pizza in foil tray, cinnamon rolls, coffee cake, those foil cookies!
I love this episode! Mariela is so awesome and explains everything so well! I want to learn from her! Hope they can open a spot in Los Angeles if they haven’t yet!
Omg not Mariela?!?! I had to click on this so fast to make sure it was her! Man I love her pastries & business. She use to do deliveries in my city & I would usually order almost all the time!
I started making conchas about a month ago and find them so much fun to make. The latest ones I made were curry-based. I think it is my new favorite flavor. Glad to see Claire diving into the world of conchas, too! I really love the flavor options that Mariela shared here.
What a special behind the scenes look at one of my favorite pastries!! Literally every flavor sounds DIVINE. Bookmarking this spot for my next trip to Austin.
Delicious!!!! I made my starter with bread flour and the roll with Kamut flour. The Conchas were soft. The King Arthur recipe said makes 10 rolls - they were bigger than I expected. Thank you both again!!
Woo woo love these. I lived in the Coachella valley which was name erroneously. It was supposed to be the conchella valley. I adore all things Mexican cuisine
Conchas are literally my childhood 😭 I had no business eating this with a cup of coffee as a kid 💀 my grandma would heat up some milk and would add like a tiny teaspoon of instant coffee 😅 used to love going to her house bc she was the only one that allowed me to have that and it made me feel grown up😭
Loved this one. OMG - I'm going to give it a try this weekend. Also, chef Marliela did a great job explaining her methods. this might be my fav. dessert ppl episode.
I love Japanese Melonpan. I bet I would love these too! I especially want to try the lavender one! I think I could try to make these at home! Thank you for such an interesting and inspiring video.
I'm thinking of making these and using a filling in the bread. Something like a honey nut , a fruit or even a custard. It looks so yummy and the thought of biting into a delicious filling makes my eyes roll back into my head with ecstasy.... Man it made me hungry for something sweetish. So I'm snacking on some chocolate chips (it's late and I just didn't want anything too intense to make or to filling to eat now near bedtime and I'm out of ice cream 😢)
Im not a baker but as a lifelong consumer of pan dulce, I much prefer them warm. In Mexico, ladies would wait int he morning for the fresh baked pan dulce.
These look soooo good oh my gosh 🙈 I need to go to America just for the excellent melting pot of foods. Mexican food in particular looks like something I would gobble up. There are a few tex mex type places here in the uk but I doubt it’s as good as the authentic thing. Loved the vibe of this vid. You guys bounced off of each other really well! Yet another enjoyable vid. Thank you Claire and team behind the cam for the fab content ❤
i never cared for conchas because i always thought they would taste better and more sweet than they do specifically because of all the colors! so i was always disappointed before, but i will give them a second try now knowing all of this
I don't like conchas, and as a Mexican that's always a hot take when I tell people. I just don't like how they always seem very dry and tough. After this video, though, I want to try and make my own. They look so good.
I love how she describes everything in terms of the dough's emotions. It rises until it's happy, and you stop shaping it before it gets mad at you.
You have to really get to know your dough before it will speak to you.
That’s why I’m a cook not a baker. But I’m still gonna watch and learn what I can.
dough can sense fear
@2darkdragon 👩🍳 😘
Gonna go out on a limb here and guess that she has cats.
Animism is very mexican thing.
Mariela has the best personality with her baking! I think her and Claire had some of the best rapport of her guest episodes
Just looking at her shop made me want to fly to Austin. It looks magical.
she is so magnetic!

I agree. I think she wanted to eat one straight out of the oven.

Conchas came from bakeries in Mexico
Hello Mariela and Claire :) I love the green one. It reminds me of a little turtle shell. Thanks Y'all!
Thank you for raising my state of conchasness!
I love the way Mariela described how happy the dough is or isn't
Claire saffitz and conchas? This my shit. This is home.
Such a good episode! I didn’t realize that’s how concha is made. It’s one of my favorite bread/pastry. Plus the moringa powder makes it healthy 😉
¡Maranitos! Conchas are just fine. They’re like the butter cookies of Mexico. Give me the little piggies every time.
Mmmm mi favorito
I love conchas, and I love making conchas! So glad this popped up in my videos to watch.

This was absolutely delightful and I’d love to see more videos from/with Mariela! Thank you for teaching Claire and all of us how to make conchas!
