      Thanks for all the videos. It's kinda hard enough to actually cook, much less shoot the videos! Lol
      So, any regrets not getting the wagon or trailer model? I like the look of the regular patio model like yours, I just wonder about me dragging it around. Thoughts?

    Looks good my friend, that is a great add on to the fire box, it breathes real well with the legs on the fire great, of course with the cost of these grills today, that should come standard, they know the fire needs to breathe. The chicken looks great, getting the skin crisp, and the chicken moist, is not as easy as it looks, well done sir.

    Another great video my man! I too am a fan of using a log rack/grate on the firebox. Easier ash cleanup, plus coal bed gets airflow from both top and bottom of grate. As for the water pan, I only use it to cook brisket/beef ribs, but not on chicken. I feel the extra moisture doesn't help crisp up the chicken skin. But that dry brining seems to do the trick for you. I have to try that next time. Cheers brother 🍻

      Chicken creates it`s own oil from the skin, I do not use water on my chicken as well, rule of thumb is no added moisture to the skin the dry brine will pull out moisture.

    Did you consider finishing the chicken over the open flame with the cowboy grill? I use mine all the time with steaks, but have yet to try it with chicken. Thanks for the videos. You are seriously good at making them and I truly look forward to watching them. Thanks again.

      thank you for the support...much appreciated. I did before with wings where I finished them off on the cowboy grill. it would work with whole chicken too.i just bumped the fire up on the second half of the cook to 325 -340 and was enough to get nice crispy skin on them.

      Other than containing the fire in one place ...I don't really see any difference ..it also add some esthetic to the fire box.

    Awesome as usual few questions have you found a sweet spot on the pit?and would you say that’s the smoker has more top heat or underneath heat or is it pretty even just curious cause I normally cook brisket fat side up since you’ve had your smoker for a while just wondering your thoughts thanks and keep up the great work

      upper grates tends to get hotter than lower...it's normal heat rises but not by much.i'd say middle bottom grate would be my preferred spot to cook on.then again it's just my own experience and opinion.everybody is different.thank you for watching.

      You say your Fire Grate is 14”wide at the top and 8” in the middle, I too have a 1975 and wood like the exact same Grate but on the website it list it as being 12” wide at the top and 7” in the middle. Am I just not seeing the right Grate on this site ? Would like the one you have. Thank you

      Airflow wise ….to be honest with you I don’t think it makes a difference 👍👍but when it comes to aesthetic and looks I think it looks good in the firebox plus it contains the fire in one place so I would say it’s not a necessary accessory to your smoker …you can do without ..thank you for watching🙏🏽🙏🏽🙏🏽🙏🏽

    Could u tell me where did u get the steel plate to hold your stick wood in the fire box?

      the grate in the fire box doesn't add anything to the smoker beside the looks...it's for esthetics only.

      @@bpackowski the width on that fire grate is around 15 and my fire box diameter is 24…l’heure length is 26….I guess you can squeeze it in there.but to be honest with you…you really don’t need a fire grate..it’s just my ocd kicked in and went for it

    I noticed that you keep a car jack when cooking. Is it because the pit is NOT level? or is it because your patio concrete is not level? Just curious, can you put a level on top of the firebox and pit? Obviously, it would be a fire hazard to have a pit that leans toward the firebox, and have the potential for a grease fire. Great video... by the way, are you on Instagram?

      @@petemitchum3198 As Omar say it is not needed, but I have posted my/our findings in a Facebook post on the owners page. It's fun to play with any idea to make things easier, better etc. This type device we found to not to be needed and can disrupt the pressure which creates great convection. I do LOVE Omar's videos so just my two cents.
