Looks tasty. You should try organic chickens. I know they are over three times the price but they're completely different. Taste of chicken is so much stronger and reminds me of what chicken tasted like when I was a kid. My wife says she still dreams about the first one I made.

To be officially recognised as an organic farm, hens must only eat pure, organic feed and no nasty animal by-products like egg shells and ground bones.
You should see if you can find some of those battery operated spinning Christmas decoration hooks. Would be good to keep the chicken spinning while they hang there.. i really wish that fire pit was available in New Zealand!

My dogs are on a predator diet they eat only raw meats and bones. One of the main parts of their meal every day is a whole chicken leg quarter. People who complain about dogs eating bones have no clue how wild K-9s live. Bones that have been cooked to long can shatter and hurt a dog. Anything else is perfectly fine for a dog.

Hanging the chickens from a string reduces maintenance. Just give them a twist periodically.
Looks like a street chicken stand. Customers come up you chop uo the chicken, wrap it uo and bag it.
