Lady, you really know what you are doing. I’m a 73yr old white woman, who really does know how to cook. But you have to get the right advice if you want to learn something new. You are simply the best. A few months ago I made your chili verde. I was going to make pork enchiladas and cover with the chili verde, but we never got that far. We couldn’t stop eating the chili verde. My son swears that was the best meal he ever ate. I also made corn tortillas. We thank you so so much. If I’m looking for Mexican cuisine I go to your website first.
Roseanne, you and Nelson are such a fun and loving couple❣️I always enjoy your recipes, thank you so much for all the work you both put into making the videos❗️😁
Thank you for being so patient with your recipes, no heckling with abuelo to ask him how to cook something and he says "it's all to taste" lort. Your salsas are so good! 🤌🏽🤌🏽🤌🏽🤌🏽
Made it for dinner tonight and it was absolutely delicious. That sauce rocks, what amazing flavor. Almost left out, pretty simple too. Really looking forward to leftovers.
I totally agree that chicken thighs are much tastier than chicken breasts. I've read that the reason chicken breasts are used in most restaurants is because the are visually more appealing. Personally i care more about flavor than appearance and thighs win hands-down.
It speaks to how a lot of westerners are trained to go for looks rather than flavour or taste. Once i started cooking for myself I started trying thighs and was quick to stop buying breast. Here we are like 15 years later and I'm regarded as an excellent cook!!
Have you ever tried using salsa Verde to cook your rice in instead of water? I've been doing it for a year now and serving it with black beans and grilled chicken. Plenty of salsa Verde on the side as well. The smoky flavor of the grilled chicken really adds to the fresh salsa.
I'm from Raipur, India. I follow your recipes. This one sounds very interesting. However, I will have to replace some of the ingredients, with what is available here. All the best.
I don't see why not, but note typical stew beef takes much longer to cook til tender, typically close to 2 hours, so it would not be a 'quick' weeknight meal. You'd want to add the potatoes and veggies in the last half hour or so.
We were excited by this recipe but find it lacks a depth of flavor, making it a lot of work for not much payoff. I followed the recipe to the letter, including epazote and mexican (not greek or turkish) oregano, and I’m not afraid of salt so it was well salted. It didn’t have the deep, satisfying umami flavor we like.
Just finished making it. IT WAS DELICIOUS.

I love the idea of putting the chili’s onion and garlic on a pan and in the oven.
