SOUR CREAM CHICKEN ENCHILADAS WITH HATCH GREEN CHILE: Delicious Recipe You'll Make Again and Again

- These Sour Cream Chicken Enchiladas with Hatch Green Chile are so delicious, you'll make them again and again. Read on for the easy recipe.
Sour Cream Chicken Enchiladas
shredded chicken (If you cook your own, be sure to save the chicken broth for the sauce)
corn tortillas
finely chopped onion
grated white cheese of your choice (muenster, monterey jack are great choices)
vegetable oil for frying
For the sauce:
1/2 stick of butter
4 Tbsp. flour
2 cups chicken broth
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. cumin
approx. 1 1/2 cups Mexican crema or sour cream
approx. 1/2 cup of chopped Hatch green chile
Fry corn tortillas in hot oil and place on paper towels to drain excess oil. Fill individual fried corn tortillas with shredded chicken, onion, & cheese, and roll tightly. Place in un-greased baking dish with seem side to the bottom. Repeat the process until entire baking dish is filled with rolled enchiladas. (A 19"x13" dish should fit approx. 14 enchiladas.) Set aside while making the sauce.
Melt butter in large skillet over medium low heat. Add in flour and whisk until smooth. Continue to cook for 30 seconds then add in chicken broth and continue whisking. This should slowly begin to thicken and form a rue. Once it looks like a smooth white gravy, add in the salt, garlic powder, & cumin and continue whisking util seasonings are incorporated into the sauce. Add in Mexican crema or sour cream and blend until smooth. Finally, add in desired amount of Hatch green chile and mix to combine. Remove from stove top and pour sauce over rolled enchiladas in baking dish. Top with additional cheese and onions if desired. Bake at 400º for 25-30 minutes.

I made this recipe yesterday and my husband couldn't stop saying how delicious it is! He doesn't like sour cream, so I didn't tell him it was in the recipe. The only thing I did different was I also added hatch chile to the chicken mixture as well, and a little saute onion to both the filling and the sauce. It will be on my rotation from now on! In my opinion ALL enchiladas should have onions inside them. This sounds AMAZING! I definitely will give it a try.

Looks pretty tasty, especially with the Hatch! For anyone who might want a slightly healthier version, rather than frying the tortillas in oil, I usually dip them in the chicken broth, heat them in a pan for a few seconds per side, then wrap in a towel to keep warm. They stay pliable, retain their shape after baking, and it adds flavor!

I miss Albuquerque so baaaaddd! I lived there for 53 years before moving to Wisconsin in 2020. There is no real chile here! Mexican food is really different.The first time I went to the store I asked for fresh chile. They took me to the bell pepper section!!!!! After a year here Walmart started selling the 505 green chile. Not as good as fresh..but better then nothing. I'll be using that when I make these! Thanks!
Bell peppers!?! I feel your pain. It's hard when you move away. I've become a fan of that 505 Southwestern and have a jar in pantry on standby, for when I run out of my own green chile and don't want to thaw another bag from my freezer. It definitely will do the trick for this recipe. Hope it brings a little taste of New Mexico to you in Wisconsin.

I mix the shredded chicken, shredded cheese, diced onion, (and I also add a small can of "Rotel tomatoes with lime juice and cilantro".) in the same bowl, then use a tablespoon to load up the tortilla. I also add 4oz of diced green hatch chilies to the sauce. Then add shredded sharp cheddar all over the top after adding the sauce.
Made these last night, AMAZING!!!

Ok Marci… I did a really close version lol. I used to HATE cooking, mostly because it was just another chore. However, these days I’m cooking for enjoyment. Thanks for this! I adjusted seasonings to my taste and added 1/2 c freshly canned roasted tomatillo salsa verde instead of the hatch Chiles Swapped garlic pwd for onion and voilà perfect for my tastes 😊

I make some enchiladas almost like this but instead of chicken I use crab sautéed with baby bell peppers and for the sauce I use heavy cream mixed with green salsa and cheese. I just love enchiladas doesn’t matter why kind you make 😊

We’re going to the Hatch Chile Festival in September for the First Time. I’m going to bring several cases of Roasted Chile back for my freezer. We love all your recipes, they are so delicious. I have used several of them in my Food Business in Texas and I get the best compliments from my customers!! You’re the Best!
Wow! That's so nice to hear! Where in Texas are you, and what's the name of your business? Just an FYI, last year I had them peel my chile after they roasted it. (They shoot water into the same roasting drums.) And while it saved me tons of time from having to peel them myself, the pressure damaged the chile. All the stems broke off and the chile wasn't as meaty. I wasn't able to make a single relleno with them. Just something for you to think about, because I didn't realize until after I got home. Of course, I was also there during the festival when there's so many people, so it could be that they were in a hurry and turned the pressure up too high.

We make a Great Hatch Green Chile Burger and I do weekly specials that change between Mexican Food and American food. Your red or green enchilada recipe is the best we’ve ever had. I got them in Juarez about 30 years ago. I've broken all but one of the matching cups, and two saucers. But miraculously, I have all 12 plates left. I really love them, too. You can find similar ones on Amazon, if you search under "barro dishes."

I make mine the exact same way. Now I want some! Question? Do you ever make Tinga's? My late husband used to lose his mind over them...he was always begging me to make them. We loved ours with tons of cilantro on them...YUM! I tell ya what...I sure miss seeing that precious little Miley in the videos...I know you do too. Was she a 13" beagle? My girl Darby O'brien was a lot bigger than Miley.
I never grew up eating tingas, but that's a great suggestion. I'll put it on my list of recipes to work on and share if I like it. As for Miley, she was a 13"-15" beagle and I miss her more than I can say! I came home from work yesterday, sat in my car and had a cry-fest because I knew she wouldn't be greeting me when I walked through the door. I've never used flour tortillas for enchiladas, so I have no idea how that would taste. I definitely would recommend corn over flour.
So my fav part is that instead of crema I can use yogurt for those of us who are lactose intolerant
