    Hi chef 🙏 trust me I do have a tip for avoiding the messy gum. After cutting in two halves or four may be ,put the pieces of jackfruit under running water. Easy and simple 🙏

    we do it in "koltola" where we have our handpump and use "bothi" which is a "blade attached to a wooden board" ( you could see those in Indian fish market mostly) and a bit of oil on hand

    We use tender jackfruit before the pods are formed, they will not have much latex. Can use news paper to remove latex.
    Use metal sickle or knife. Once chopping is done, heat it on flame and carefully rub with old cloth or paper, all the sticky latex will vanish.

    U r an expert .In my hometown we use coconut fiber and news paper..There r many types of jackfruit example pulinchacka, pazamchaka kadachaka, idichaka and many more varieties.All of them r used for different purposes .Idichacka is used for a dish called puziaku, sometimes plain otherwise with fish. Pazamchaka is used for payasam. Pulinchaka is used for brown masala curry. Kadachaka is used for making chips and also eating raw. I am not trying to tell u that I have a hang of everything. Its just that I want everyone to know what I have seen .A kind of philanthropy. U can always ask Google. Mine is personal experience. What we grow and make at home.

    How I do it is to leave the Kattal for a day so the milk would get dry. Usually the Kattal we get in market comes without milk, but if it's fresh, then it wld hve the milk, so to avoid all the mess, I cut it from tree and leave it outside for a day, and next day it wld be dry. Honestly the most difficult part of cleaning and cutting a Kattal is its milk secretion, so if we hve found a way to avoid it, then you hve many ways to easily chop it and remove the skin too.

    If you use ghee instead of oil it will not stick that much and when you wash your hands it will come off quick. Try ghee next time. This is South Indian tips. 😉
