    I say this is from mom’s kitchen, but really that means “just add a little this and a little that”. 😅 So when I made this I had to let her taste it. And she was actually blown away and didn’t even pick up on the special something in there. She said “I may have to go back to the drawing board” 👀. Still can’t believe I impressed her! 🤩

      My mom, like yours, cooked a million meals for me over my childhood. It's a privilege to pay it back and labor for them, one good meal at a time! Fyi I'll be stealing your recipe ☺️

      I lost my Mom in 2015 and my Dad in 2020. As their health declined over years, their palates changed as well. I would make lunch for the 3 of us (and any of their tag along church friends) every Sunday. As they aged, they LOVED bigger, bolder flavors. I suspect your Mom loves your food and is so incredibly proud of you for how you're sharing it with the World. Food is such a powerful way to bring people together and share love. It's crazy how Moms influence our lives, even when they've been gone for years. Stay amazing.

      I remember getting a similar reaction once I finally figured out MY version of Jamaican Rice & Peas, because you know everyone does it a LITTLE different. Just like making a jerk seasoning/marinade.

    I'm from the Caribbean and recently learned to add peanut butter to my stewed lentils and curries. WoW, just a little will thicken up a pot quick. Great recipe Andrew.
    Pumpkin is a great thickener in the islands also.

    Im 🇭🇹 Haitian and made some lentils with sweet potatoes and other veggies and seasonings. But I have to try this recipe here. 1 month vegetarian and im loving it. Thank you for posting great easy affordable meals. I just need info on how to properly season and pick the right tofu

    I'm not Caribbean but let me tell you! This recipe is amazing!!! I grew up in the south eating soulfood for a good portion of my life. Not realizing until I became an adult that I probably shouldn't eat this way all of the
    Time I started changing some lifestyle habits. My biggest issue is finding non meat alternatives that taste good while packing a healthy punch. This recipe is perfect and so flavorful! I love peanut butter too so this was definitely a win win for me! I'm looking forward to trying your other hearty recipes!!!!

    This recipe is soooo good! even if i couldnt follow it 100%!
    I live in Romania and i never saw russet potato (also,i cook very rare with potatos) but this time i had some white potatos leftovers so i used those (maybe 1 potato in total)
    I didnt have jamaican curry powder so i just added organic curry powder (wich i use in all curries and i really love)
    Also i used canned lentils and skipped spinach bcs i forgot to buy.. (but this can be added next time you reheat the curry and will be very tasty if you just blanche the spinach into the curry :D) and skipped bonnet pepper as i didnt saw it here..but i used homemade chilli oil to top the curry!

    Made it this week, omg it was delicious. I'm not vegan but I'm trying my best to get there. My husband whose from the Bahamas and extremely picky about his food, loved it! My 2 year old ate the whole bowl (I'm talking adult size😂😂). We really enjoyed it, thank you ❤❤

      Your mom is Jamaican? That explains a lot. Money buys a proper education, not the other way around. Your career doesn't require a university degree but you explain your recipes like a college professor. An advanced degree usually won't get you anywhere in life but there are always lucrative opportunities in the culinary arts. I have a B.A. in Economics so I know how these things go.

    Just coming here to say I made this tonight and it’s soooooo good. Didn’t have Jamaican curry but Indian worked fine. This also makes A LOT of curry so if you are cooking for one, half it!

    I made this last night. Used a habanero pepper. For the Jamaican Rice and Peas which is linked to the recipe i used the remainder of the can of coconut milk and some oat milk which worked perfectly.

    OMG, this is the BEST! 😍I make curried lentils with coconut milk and spinach all the time, but this is Next Level. I love using the 2 different types of curry, adding the peanut butter (I used almond butter) and lime juice at the end. Oh, and toasting the spices in the beginning makes a huge difference. I'm glad I doubled the recipe. 😋 I'm so excited I stumbled upon your channel.

    I loved this video! I watch a lot of cooking stuff on youtube, but this one is really cool. I generally don't like the ASMR approach and usually I just quit, but the way you prepared your vegetables, I just couldn't quit. So I really enjoyed the cooking process - despite no words spoken. And then you sit down and talk to us, explain the process, share some great insights (alternatives to coconut milk!) and bring the video to a close.     This was so delicious. I found a recipe for Jamaican curry spice and made it for this recipe. It’s such a wonderful flavor profile!! Followed your recipe but added more veggies. Delish!!!!!❤
